Notes: Scaled recipe to keep malt and syrup proportions correct.
Used a 90 min boil instead of 120 min. My OG was 1.088, less efficient due to smaller sparge water volume compared to the 120 min boil. To get 75% efficiency at 1.090 OG, use 120 min boil.
Cooled to 63F over night and pitched in the morning. After aerating, wort was about 65F. Let it free-rise to 66F and start from there, rising 2F per day. |

Notes: Decoction steps:
1. Heated H20 to 100 F
2. Pour all water (4 ga) onto grains rest 15 min.
3. Decoct 13 quarts
4. Heat to 150 - 160 F and rest for 30 minutes
5. Boil decoction for 20-30 minutes
6. Add all decoction to mash tun to get all mash to 150 F
7. Rest all mash at 150 F for 1 hour
8. Sparge 170 F (for 6 ga total)
Add all hops at the start of the boil
Add Irish moss and yeast nutrient 10 min before the end of boil + wort chiller |

| Notes: Shoot for mash pH of 5.3. Adjust with lactic acid additions. Only add 5 grams of warrior hop after flame out to minimize bitterness. Chill to 170 then whirlpool for 20 minutes. Chill to pitching temp, record gravity reading then pitch yeast. Shake for 1-2 minutes. Use blow off tube or else this will erupt. |

Notes: 4 ml HopShot hops extract at 60 minutes
Add gypsum (calcium sulfate) to taste depending on your local water source. Mash 50 minutes at 150°F (66°C). Vorlauf (collect first runnings) until the wort runs clear. Collect 6.5 gallons (24.6 liters) and boil for 60 minutes. Add yeast nutrient at 10 minutes. Target 1.065 specific gravity. Chill to 70°F (21°C). Pitch healthy American ale yeast. Ferment at 66°F (19°C) and turn off the temperature control as fermentation vigor slows. Once desired gravity is reached, rest for a few days and dry hop for 4–6 days. Rack to a corny keg and force carbonate at 38°F (3°C) for two weeks.
