Notes: Use 4.5 gallons (17 L) carbon filtered water, adjust with 4 grams gypsum.
Step mash: 45 minutes at 150°F (66°C), ramp to 170°F (77°C) over 15 minutes (or ramp by infusing 2.5 gallons boiling water), rest 10 minutes at 170°F (77°C).
Vorlauf until clear.
Collect 6.6 gallons (25 L), sparging with 175°F (79°C) water. Boil vigorously for approximately 75 minutes, hopping as in ingredients section.
Whirlpool and allow to settle for 15 minutes. Chill wort to 64°F (18°C). Aerate wort and pitch yeast.
Ferment warm (ale temperature). Dry hop one week into fermentation.
Allow two hearted clone to stay warm with hops for a week.
Rack beer, crash cool, and cold age for a week.
Rack beer, prime with sugar and bottle. |

Next time start with 60L, we ended up a lot lower than expected. Keep time consistent and keep a backup amount of wort.

- 1:39pm - mash in at 150 degrees, 7 gallons
- Mash pH 5.2

- 3pm - Mash out at 175 degrees

- 1oz perle 5.2AA @ 60 mins
- 3/4 oz tettnang 4.0AA @ 60 mins
- 5 whirfloc @ 25 mins. Bunch of protein in boil because of new grain mill
- 1/4 oz tettnang 4.0AA @ 15 mins
- 1oz hallertau 3.8AA @ 6 mins

- Ended up with about 5 gallons in 6.5 gallon carboy. Lots of headspace. Pitched at 73 degrees. OG was 1.061. Fermentation was vigorous even with the excess headspace and blowing through the airlock. Next morning gravity dropped to 10.54 and temperature dropped to 68. Temperature rose again the following couple days to around 70. After 3 days put the carboy in a water bath and temperature dropped to 64. |

Lemongrass Alternatives:
Use any one or more of the following methods as suitable. Suspend it in the wort/beer using a grain bag or a tea/spice steeper; use more bags/steepers as needed.
1. Lemongrass Boil (Best for Flavor)
Add to boil pot 5-10 min before flame-out.
2. Lemongrass Whirlpool (Good balance of Flavor & Fragrance)
Use 25-50% more. Add to wort after flame-out (at 203 F) and let it steep in there until transfer to primary fermenter; cover with a lid (at 170) to keep the fragrance and flavors in the beer.
3. Lemongrass Dry Hop (Best for Fragrance)
Use 50-100% more i.e. up to 2X the amount during secondary fermentation.
PS: Lemongrass by weight roughly based on 1-2 tea spoons per 12 oz of finished Beer. |
