Notes: No Chill- Started a yeast starter day before and pitched 1-11-14 of 1 gal starter. 2-1-14 Added zest and guts of 3 blood oranges ( no pith ) 1/2 oz dried sweet orange zest. 2-17-14 Kegged with Gyle of 1.5 qts of original wort and pitched with slurry of Strand Brewing orange wit from bottle. 3-1-14 Tapped and tasted - Gyle worked great and tasted flavorful not sweet. Carbed @ 10 psi CO2. Will wait for it to chill down and enjoy.
3-3-14 - Cleared amazingly well. So good after it chilled down. Wish the weather was warmer for this bad ass beer. Had a New Belgium SnapShot wheat today and this was WAY better. 1st few pints were cloudy and bits of coriander, but none now. Gets better daily. |

Notes: Pitch yeast at 53 degrees. Ferment at 53 degrees for 2 weeks. Soak the 4oz of cocoa nibs in vodka while in the primary stage . Then transfer into secondary and add the 4oz of cocoa nibs to the fermenter. Ferment at 53 degrees for 3 months. Cold crash for the last week near 32 degrees. After racking into the keg add the bottle of Hershey's chocolate syrup. |

tried to do overnight step mash, starting cold, then ramp up, but the GF stalled at 90F for a few hours and basically stayed there for 6 hours. there was scorching on the burner so i transferred to the other GF. Then ramped up (with grains in place) and mashed at 152 for 45 minutes, then mash out at 167 for 5 minutes.
at end of boil, whirlpooled for 3-4 minutes, let it sit for 20-30 to settle (I was still prepping my FV)
Chilled to 70. closed off the keg FV and left it till that night. Pitched probably around 65-70. No starter just the wyeast smack pack thing.
Day 0 (March 3 2017) home from work very active fermentation, gonna keep ramping the temp up to high 70 to get it to finish out.
Day 2 72F the very active ferm now modestly active.
Day 3 74F
Day 4 77F - still a nice slowconstant bubble
Day 7 79F - stopped bubbling, SG 1.012
Kegged with CBDS and carbed for Molly's show
bubblegum, cirtusy bitterness, some bite maybe pepper like.

Notes: Mighty Duck! is an attempt at an extract Kwak clone.
Aiming to produce 40x330ml bottles from this brew so I need at least 13.2l available at bottling time. I'd need an estimated 15-16l going in to the primary fermenter.
Actually got 17l going in to the primary, topped up a little, to 18.5l, to bring the OG down from 1.078 to 1.070.
If I'd left the OG at 1.078 and fermentation ends at the anticipated 1.016 then the ABV would be 8.14% - closer to Kwak's actual 8.4%.
FG reading is 1.010 giving an ABV of 7.88%
Moved 15.5l to a secondary FV after primary completed. Is clearing nicely after the first week.
Bottled 46 x 330ml bottles from the secondary. Very little sediment and a good, clear, beer going in to the bottles.
Beer at bottling was sitting at 11C hence the lower volume of brewing sugar (corn sugar) than I'd normally expect for a target CO2 volume of 2.2.
1st photo is Kwak on the left, Mighty Duck on the right after 1 week in the secondary. Has the banana hit you get from Kwak.
The flavour development in the bottle has been interesting.
For the first month of bottle conditioning I tasted a bottle at week 1 and 2 and the banana flavour was reducing with bitterness increasing. I waiting until it had a full month in the bottle before tasting again and it was the same change - even less banana and more bitterness.
Zero carbonation at the end of month 1.
Waiting until month 2 and a big change - banana flavour is starting to re-appear and that rich Belgian Dubbel flavour is starting to appear. The bitterness has almost completely dissipated.
End of month 2 and the carbonation is starting to appear, a good hiss when the bottle opens but overall carbonation is light.
The beer is almost completely clear now too.

Notes: Split batch - 5.5 gallons Kolsch ale yeast, 5.5 gallons Belgian (Wyeast 3655).
Kolsch - 2L starter + Clarity Ferm. This half gets the fridge. Start on the cool end for 4-5 days, bump up to finish out, then cold crash for a couple of weeks.
Belgian - 2L starter, but keep 500ml aside. Pitch at 65F, then allow to free-rise at cellar temp.
We will need Fermcap for this one before the boil. |
