Noble Savage Brewing
Beer Description:
This beer was inspired by a connection made through a brewing discussion online. An East Coast brewer named Brian Knight took the time to share knowledge and help shape this recipe. Though we have never met, his input played a role in bringing this beer to life. The name “Dark Knight Lager” is a nod to that influence and the collaborative spirit of homebrewing.
Tasting Notes:
Dark brown to near black in color with ruby highlights and a tan head. The aroma offers light roasted malt, subtle cocoa, and toasted bread notes. Flavor is smooth and balanced with mild roast character, gentle chocolate tones, and a slightly nutty finish. The Saaz hops provide a soft bitterness that complements the malt without overpowering it. Clean fermentation from Lutra Kveik results in a crisp, easy-drinking dark lager.
Overall Impression:
A smooth, approachable dark lager with balanced malt character and a clean finish. Designed to be flavorful without heaviness, making it an easy-drinking option for both light beer drinkers and dark beer fans.

Brewed with American and German malts and fermented with Lutra Kveik yeast to achieve a clean lager profile without traditional cold fermentation. |

Notes: After a few brews of beer, I can also give the final details regarding the fermentation and taste of the beer;
I used the rapid fermentation method of lager - initially the fermentation was set to 13 degrees Celsius and left for 5 days, after which the temperature was raised to 19 degrees and by the end of fermentation, diacetyl rest was made to 18 degrees (3 days). The primary fermentation lasted for 2 weeks and thereafter converted into kegs as a secondary and remained for two more weeks. Carbonation in kegs at 30 PSI, 3 days and beer tastes great.
Amber in color, caramel and sweet in taste, but a perfect fit. |

Notes: A very pale to light gold delicately balanced Kölsch style ale with hints of flavor/aroma hops and fruitiness that finishes dry to slightly sweet.
We recommend boiling your hops in a hop bag (muslin sock) or straining them out before primary fermentation.
Add Irish moss or whirlfloc to your boil for the last 15 min. for better clarity. (not included in the kit)
Try to ferment on the cooler side of the yeast’s temperature range, for a crisper, lager-like finish. |
