taking out the galaxy because ew. i have doubts about the huell melon as well. maybe get some more mosaic to have on hand in case it sucks you can add 4 more oz dry hop in the keg.

REPACKAGING Umbrella BSG Sitiva brew into a new hazy featuring Julius huell melon and possibly mosaic and galaxy. these are all hops gifted to me by pixelperfectbrewing. the hops all have dates on them (should record that here) and are packaged well.
will plan to hop with only julius and huell and see how it is. if too bland finish off with 2oz mosaic and 2 oz galaxy.
going to also use hothead or maybe voss for this on time crunch before christmas. will pitch 1st round dry hop same time as yeast.

still need to fill in FG. the beer tasted amazing but turned brown after about a week. mustve oxidized during kegging or carbonating (shook keg) but it really tasted great, a lot of tropical fruity flavor and smell. not sure what hops are in this blend. detected a small amount of galaxy in it.

Brew day. Ended up with too much wort, again. Forgot to cook oats but I did double crush. Still only got 50% eff wtf. Adding 2 lb dme to try to save it. Adjusting the attenuation to convince myself kviek will go down to 1012 and 8%. Bad brew day

Initial recipe creation,
grain bill : copying DRIP 3. boosting a little bit. changing eff to 60 i think we should be able to do that especially with cooked oatmeal. pay more attention to volumes. try not to end up with too much wort!
hops : will feature zamba. single hop. composing schedule based on blueberry yum yum. even split between 5 min, flameout, high krausen and standard dry hop (maybe keg)
yeast : prob would be better with london, but will consider kviek
water : thinking i will use tap. acid malt for pH. we have observed better results in west coast with water adjustments, maybe we try here too?

2/3/2021. Did not make it into feb. Its about 40 days since it was kegged, less than that since canned. The canned beer stoll looks nice and smells and tastes better than some commercial stuff but it's too bitter and lost a lot of spunk. For this next time I think we need to nail down the gravity, nail down the ph. Ditch the warrior and do like a full lb total hops and do like 1/3 hop bill in whirlpool. Try to limit oxidation in transfers but I dont think that is the main problem here. Consider doing some water adjustments. I wonder how the west coast ipa water profile would do for this.

12212020 updating recipe here to reflect what i did. please reference previous versions of this recipe for the original/correct recipe. realized i didnt have any real citra during brew day so i overloaded on mosaic and used a little citra noble. then in dry hop i did something off script as well cant remember what but i think i mightve done 4 oz citra and 2 oz mosaic?
efficiency was bad, target 1072 actual 1065. bad ph reading. not sure what happened but maybe some issue with water. need to examine water profile from tap and/or build a custom profile from scratch.

kegged this a couple days ago. really hot with hop burn. and kind of a rubber smell and taste. i wonder if i pushed this kveik too far. also i have not been cleaning it from trub and it could possibly have gelatin protein gunk it in? not sure. prob need to start again with a fresh pitch. anyway the first pint was pretty bad tasting and the second i drank last night was also but a little better. maybe hop burn will subside. its only about 10 or 11 days out from brew day. some ipas taste better after a couple weeks. maybe itll improve.

bumped up 2 row from 7.5 to 9.5, boosted up oats. not sure how efficiency will be but im assuming 65% without the oats factored in. with oats added im assuming it drops to 55. could be wrong. maybe the gravity is the problem.

Notes: Hazy Pale based on Garth Juice (https://www.brewersfriend.com/homebrew/recipe/view/1107934/garth-guice-42l-v2) but lowered ABV.
Since Last Time:
* Replaced Pilsen Malt with Wheat Malt and reduced to lower ABV to ~5%
* Replaced flaked oats with malted oats and increased to 2kg
* Pumped up salt additions a little after dropping in last version
* Halved bittering hops
Overall aim is to lower ABV while retaining good mouthfeel and bitterness.
Wet Hops:
* add first wort hops to kettle after removing biab bag and wait until batch sparge is complete before firing up the kettle (this should give time for the hops to steep prior to boil)
* add 0 minute hops at flameout (they stay in until end of whirlpool)
* stir gently and allow to cool to ~80C
* add other hops and hop-stand for 20 mins
Dry Hops:
* Mix dry hops and divide into 3 equal portions, add at:
- 2 days after fermentation starts
- end of fermentation
- 3 days after end of fermentation
* add dry hops at pressure using valve
Fermentation:
* Start at 18C and let naturally increase with ferment
* Ferment at 10 psi (naturally increase pressure)

Notes: Accidentally used the barke munich and acid malt. Strike water was 160 but the grain cooled it down to 143ish. Used 2g calcium, 2g gypsum, 1g each of epsom and kosher salt in the mash. Added 5g of Fermaid O along with 1g gypsum and 4g calcium in the boil.
Initial fermentation temp during day 1 was around 66 deg F. Fermentation eventually reached 77 deg F on approx day 2. Fermentation slowed rapidly from day 2 to day 3. First dry hop on day 3.
Tasting Notes:
Citra - grapefruit, melon, lime, gooseberry, passion fruit and lychee.
El Dorado - tropical fruit flavors, and aromas of pear, watermelon and stone fruit.
Mosaic - blueberry, tangerine, papaya, rose, blossoms, grass and bubble gum.
Recipe Notes (Juicy Bits):
OG should be 1.066, FG 1.015, ABV 6.7%
WATER
Use calcium chloride and calcium sulfate additions to adjust water profile to about 125–150 ppm calcium, 175–200 ppm chloride, and 75–100 ppm sulfate.
DIRECTIONS
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh. |

Notes: - Add dry malt extract at first wirth.
- Add candi sugar @5 minutes left in the boil
- Ferment arount 30 degrees celsius
- After 5-7 days of primary fermentation rack onto previously Bourbon soaked oak chips/chunks for secondary fermentation for at least 1 month. The more light toast the oak chips have the more vanilla flavour. Medium toast gives some sort of chocolaty flavour and heavy toast gives roasty/smoky flavours.
Version 1:
- 100ml of Wild Turkey Bourbon
- 100 gramms chips medium toast
- 80 gramms cubes light toast
- 3 Weeks of secondary fermentation until the beer was racked into a keg for carbonation and further development (3 weeks or so)
- Then filled into bottles and capped on foam.
- The taste of the bourbon is very minimal, as are the oak flavours. But it's VERY well balanced!
