| Notes: Been sitting on 4oz of African hops for about a year now with no clue what to do with them. One of them I cant find much details on at all, but they are supposed to be fruity, so NEIPA it is. Going to toss them into the dryhop and see what they taste like. Padding out the hop profile w/ a good bit of Apollo in the boil for some American dank, and some late/dry additions of Centennial, Sabro, and Citra to help highlight some fruity notes. |

Notes: Recipe based loosely on Founder's Breakfast Stout from "Big Book of Clone Recipes" book
2 oz ground Sumatran coffee
2 oz ground Kona coffee
2.5 oz dark bittersweet chocolate
1.5 oz unsweetened chocolate baking nibs
WLP001 or WY1056 (3.5L starter)
Add Sumatran coffee and 2 chocolate varieties at the end of the boil.

Fermentation:
62-64 x 5 days. Increased to 65-66F x 5 days.
Dry bean with 2oz Kona coffee (cracked/crushed with rolling pin) in a bag. 2 oz cacao nibs + 1 oz bittersweet bakers chocolate in separate bag. Coffee left in contact x 48 hours. Chocolate left in contact x 4 days.

| Notes: Yeast stayed active for a long period of time, almost one month. It was still somewhat active by the time that I kegged, but I was happy with the flavor and abv. Out of the carboy, the beer is quite juicy. Notes of pineapple, guava, and mango are prevalent. Bitterness is mild and somewhat lingering. |
