| Notes: Step mash: 20 minutes at 122° F (50° C); 20 minutes at 149° F (65° C); 20 minutes at 158°F (70° C). Boil for 90 minutes, following the ingredient additions as listed. After boil, whirlpool for 20 minutes before chilling. Ferment at 65° F (18° C) until fermentation is complete. Conduct a diacetyl rest for at least 5 days. Do not use kettle coagulant and do not crash too fast or the yeast will drop the protein haze with it. |

Notes: Partial Mash: initial water temp was about 167 degs. 4-quart recommendation for 4-lb of grain was too little water. Maybe use 5-quarts next time? Also, intense manipulation of grain bags to try to spread the too-little liquid resulted in too-low T=145 degsF. So, I added 1-quart of hot water, thereby raising the temp to about 150. Also, next time, rinse grain bags in the brew kettle with clean water at 180-190 degs.
I forgot to update actual AA% of hops before brewing. Citra is default 11% here, but actual was 123%, so total est. IBUs are higher than I wanted- let's see how it tastes! |

Notes: Add 1 tbsp flour to the boil for added starch for the bacteria to eat during the extended aging.
Primary fermentation in 6.5 gallon bucket, with both clean ale yeast and sour mix added at the same time, then rack (in about a month?) to 5 gallon BB carboy for extended aging. Add French, medium-toast oak cubes (boil in water 10 min first). Add dregs from other lambics to increase complexity.
In the 2018 Dixie Cup competition, the Fruited version of this Lambic (aged on blackberries, raspberries, and blueberries) won gold and the Straight Lambic won silver in the European Sour category.
[Note: in 2019 version, subbed 2.25 lb Dutch pale ale malt for that much of the 3.75 lb Belgian pale ale malt (LHBS was low). Also using ECY Bug County for the yeast and bugs.] |

Notes: Single infusion mash at 154°F., using 1.5 qts water per pound of grain. Sparge to collect 7.5 gallons of wort.
Add hops at beginning of 60-minute boil. Add orange peel and coriander in last 10 minutes of boil.
Chill wort, pitch yeast starter, and ferment at 65°F. for one week, then transfer to secondary for two weeks.
Bottle with priming sugar and condition for two weeks. Optional: serve with a slice of orange.
