Notes: Make yeast starter using 2000mL spring water and 8oz DME (4-6L), boil for 12 mins. split into 1000mL flask (with stir plate) and 800mL mason jar
Bring 3 gals water to mash temp, add grains and steep for 60 mins.
squeeze out grain bag into boil kettle, add 2 qts sparge water at 170F, then top off to 4-4.25 gals using boiling water, and bring to boil.
75 min boil
Add hops/extras per schedule
- Add LME with 30 mins remaining
- Add candi sugar with 15 mins remaining
Chill to 70F, pitch yeast into 3gal carboy, auto-siphon wort from boil kettle, aerate.
- top off to achieve target OG if necessary
Ferment at 65 for 2 weeks or until FG is reached.
To use candi sugar instead of corn sugar for priming
(for 5 gals) 4.4oz candi sugar = 4.8oz corn sugar (for 2.8 vols co2)
for 3 gals use 2.64oz candi sugar (boiled in 2 cups water for 5 mins) |

Protease rest - 50oC for 45 minutes
Saccharification 1 - 64oC for 60 minutes
Saccharification 2 - 72oC 20 minutes
Mash out - 77oC for 15 minutes
Candi sugar added last 5 minutes / stir to avoid carmelization
Pitch at 20 and bring yeast up in temperature to 22 over next 6 days. Ferment out for 3 to 4 weeks
When bottling, referment with 400ml starter and lager for 4 weeks. Yeast will need to be added to Dry malt extract & water.

May 6th - Starter 2-3 days ahead of time (Thursday)
May 9th - Brew Day - Pitch at 50 degrees with starter at 50 degrees. (Keezer)
May 19th - When fermentation begins to slow down (7-10 days), raise to 52 degrees for 2 days. (Keezer)
May 21st - Room temperature for diacetyl rest for 3-4 days (basement at 66 degrees)
