Notes: Toast 1/2 pound of flaked oats at 300 degrees for 15 minutes.
Toast fenugreek for a few minutes, until browned and fragrant, then crush or use coffee grinder before adding to boil.
After 3 weeks fermentation (or FG reached) transfer to 15 gallon maple rye barrel and 5 gallon glass carboy. One week prior to transfer (week 2 of fermentation) add rye whiskey to barrel and turn 1/4 turn each day. |

| Notes: Single step infusion mash in 18 qts. (17 L) water at 149 °F (65 °C) for 60 minutes, then 169 °F (76 °C) for 10 minutes. Boil for 90 minutes, adding hops at indicated time.
