Notes: Don't be skeered.
Beta gluc rest at 105F for 20-30 min. Sacch rest at 150F for 60 min. Add the 0 min hops, swirl and cover for 30 minutes. Drop the temp quickly, pitch at 68F, raise to 70F at peak of fermentation, and let sit in primary for a total of 14 days. Cold crash for 2 days to 40F, rack to secondary and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |

According to the EBCU style guides...
"English pale ale
The earliest mention of the term Pale Ale comes from an English newspaper, in 1704. By the 19th century, Pale Ale was a beer of regular strength (4.5-6.0% ABV) that could appear bottled or on draught. 21st century examples tend to be 4.0-5.0% ABV). Classically, the style showcased English hops in a beer mashed from 100% pale ale malt. Its flavour by repute was clean and assertive, grassy but perfectly balanced, lacking the cruder hop kick of the English version of its fêted sibling, IPA...."
This simple recipe is very similar to "1864 Lovibond XB" described in Ron Patterson's book "The Home Brewer's Guide to Vintage Beer". It's interesting that the recipes for 19th century pale ales collected in Ron's book do still have quite a strong "hop kick". |

Notes: A BIAB recipe, the grain is steeped in a small kettle with 3.5 gal of water. The idea is to have optimum mash thickness, whether or not this is a relevant parameter is up for debate. We then dip the bag in the larger kettle which contains the sparge water. 5-10 mins in the sparge and we obtain an efficiency of about 70%.
On our first brew of this recipe, we did a rinse sparge and did not extract enough sugars. As a result, we produced a very light version with ABV just under 4%. The recipe has been updated to reflect the 70% efficiency and target ABV of 4.5%. |

| Notes: Rehydrate the yeast and leave for 30mins or so. Oxygenate the wort for 30mins then add yeast and ferment around 18.5C. Dry hop after 7 to 10 days of good fermentation for another 5 to 7 days what ever you prefer. Chill to 2c for a few days then rack to keg. Carb at your personal prefrence, I usually aim for 2.5 for american style brews. Leave for a week and then consume to your delight. Should not be to bitter with plenty of malt flavour, nutty, bready and a good balnace of aroma and flavouring hops. A good recipe to tinker with. Water profile makes a big difference here, keep the PH down. |
