Notes: 750g roasted and crushed pecan pieces to go in each mash step. Add before grain to avoid pieces floating to top. Roast @ 150C for 15 mins, 4X, crushing in a bag between each roast.
Reiterative mash, use half grain bill each time:
Reiterative mash 48.1L total water.
12.5L strike @72.
3L 100C Temperature at late grains.
This should give 8L run off.
Add 5L water to runoff and bring up to 67 again. Mash in second grains.

Whisky cask-aged imperial scotch ale. Beer perfect for when the rain is coming sideways. Liquorice, plum and raisin temper the warming alcohol, producing a beer capable of holding back the Scottish chill. Authentic heather honey adds a beautiful floral top note that is unachievable any other way.

Notes: Brewed via BIAB method on 12/12/2024.
Used 3 gams of CaSO4*2H2O (gypsum) and 2 tsp of lactic acid (88%). I also put in 2 metabisulfite tablets before mash.
2 tsp of lactic acid got the pH to 5.66. I added one more tsp to get the pH to 5.
Strike temp was 157.5 degrees F to reach a mash temp of 153 degrees F. Turned on eye to keep temp above 148 degrees F.
After one hour mash, I squeezed BIAB bag and was left with 19.5 liters of wort that read 8.5 Brix = 1.0338 g/L
After 1 hour boil, ~4.8 gallons of wort was cooled down to 80 degrees F and I pitched Lallemand Windsor British Yeast.
OG = 9.5 Brix = 1.038 g/L
By 12/14/24 fermentation was basically over.
FG on 12/22/24 with refractometer was 5.6 Brix = 1.013 g/L which is an abv of 3.3%
The beer has great flavor but is a little light in body. Next time I will potentially mash at 155 degrees F and maybe include a bit more grain, especially caramel grain. Maybe more biscuit too. |

We are bringing back our Blitz Series to 2016. Every Blitz we brew is different, due to the spontaneous souring process, and each version has a great blend of all the different flavours we look for in a Berlinerwiesse. When you have a good lactobacillus culture grown take half of an fv of it and add some fresh wort. This will keep the culture alive as long as you keep it warm, oxygen free and keep releasing the pressure. You can then use this liquid culture on the next brew and reuse it over and over and over and over and over...like sourdough starter!

Notes: Mash at 152F/67C for 90 minutes. Why not lower in temp? Because I’ve seen good experimental data out of a major yeast firm that shows 152F actually yields better attenuation (even as it produces a different sugar mixture that seems like it should attenuate less). The same research shows that a longer mash does boost attenuation, hence the long wait here.
Boil and chill as usual, then pitch your yeast. You might use a starter, despite the low gravity. We want to make sure we get a good start and finish on attenuation. Don’t misread this, though: we’re not shooting for an overpitch, we just want to be sure we avoid an underpitch, which can reduce total attenuation. “Enough yeast” and “even more yeast,” though, should yield about the same rate of attenuation, so one pack grown into a 1-1.5L starter should be fine.
Ferment a little warm, again, to bump up total attenuation. 68F/20C is warm for an Alt, but the 1007 doesn’t produce much of an ester profile and a larger-than-strictly-necessary pitch will keep the esters away, so you can get away with it. Leave it go for about two weeks at that temperature, and then cold-crash and lager for another two weeks. Package, carbonate to 2 volumes of CO2 (why are you thinking of going higher? We want it to seem lighter/thinner, remember?), and enjoy. |
