| Notes: Brewed as an experiment to bring out the sweet fruity thiol-derived flavors reported for Cosmic Punch (OYL-402) on the extra-dry backbone of a brut IPA. Thiol-rich hops (Cascade) are added to the mash, as the enzyme-rich conditions of the mash are reported to be important for conversion of thiol precursors into a bio-available form. Late hop additions are meant to enhance the New World tropical fruit aromas without going too crazy on bitterness. No dry-hopping is done, as this step is reported to remove thiols from the finished product (unclear if due to chelation, hop creep, or oxidation). |

Notes: - This maibock is a Munich Helles that's brewed to bock strength.
- Must be brewed to at least 1.064 OG and not more than 1.072.
- SRM should be around 6-pale to 11-golden and perfectly clear.
- Should be balanced in IBUs, 25-35 to counter the alcohol "bite".
- Pair with traditional German hops. Magnum and Saaz work well.
- 2206 is the most authentic yeast but 2124 works too.

When krausen dies down pitch to primary carboy the LAB, Brett, and honey. Use a citrus-y honey.
Dry hop for final 14 days in fermenter before bottling. Never rack beer from initial fermenter so that the Bretts have substrate to feed on over a significant amount of time in the fermenter. Dry hops should be added around a month in. |

Notes: Prepare water to eliminate chlorine and adjust to favor a slightly higher sulfate to chloride ratio.
4.9gal to mash tun to mash at 151 for 60 min mash.
Voloft until running clear and then drain off into brew kettle (approx 3.2gal).
Add 5.15gal of sparge water at 170deg to mash.
Voloft until clear and drain into kettle to get about 7.5 gallon total.
Flame on and heat to boil.
After reaching boil, boil vigorously for 15-20, then add hops.
Boil for another 60-70 mins.
Add whirlpool hops, at flame-out.
Cool to 65 degrees.
Drain in to fermenter to get about 5.5gals.
Aerate for at least 30 mins, using air pump and stone.
Pitch cultured yeast and ferment at 68deg for three weeks in the primary.
Four or five days before bottling, add dry hops in a sanitized nylon bag.
On bottling day:
Use dextrose (corn sugar) for priming.
Additional notes:
First Brewing of this recipe, I prepped a yeast starter and pitched approx 350Billion cells to about 5.4gals and the beer attenuated to a FG of 1.007 to result in about 6.85 ABV.
This was a happy miss, since the beer tastes phenomenal |

Notes: Add 1 Cup of white flour to the mash if you want to create the haze of a NE IPA.
