Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash. ( I used can un spiced pumpkin in all steps )
Secondary - 10-3-14 added 2 oz vanilla extract, 1 cinnamon stick, 16oz pumpkin flesh, 1/2 teaspoon graham cracker extract and 1/2 tsp pumpkin pie spice. Will sample in a week.
Btw- tasted really good
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |

Hit 1.048
Lag Phase took a long time due to lack of yeast starter, but is now fermenting quite well.
Finished @ 1.015, probably due to underpitching and extended lag phase. Tastes crisp and clean, hop profile very green and grapefruity. Nose is stunning; strong notes of papaya , orange and sugar-coated lemons. |

Notes: 1. Tratar 10 Litros de Água conforme target para Light Lager, favorecendo pouco corpo e pouco amargor.
2. Elevar os 10 litros para uma temperatura de 45ºC e então adicionar os maltes.
3. Manter a temperatura em 42ºC durante 10 minutos para a primeira rampa de temperatura, a beta-glucanase, cujo objetivo é diminuir a viscosidade do mosto devido a grande concentração de cereais não maltados.
4. Elevar a temperatura para 50ºC e manter durante 15 minutos, onde a ação das proteases estará ocorrendo na chamada parada proteica, cujo objetivo é quebrar as cadeias maiores de proteínas (devido a alta quantidade de trigo), diminuindo assim a viscosidade e corpo da cerveja.
5. Faltando pouco tempo para acabar a proxima etapa, tratar mais 13 litros de água e elevar eles a temperatura de 80ºC, preparação para a lavagem dos grãos após o mash-out. Nosso objetivo é utilizar 11 litros apenas, mas seguiremos adicionando até ter uma OG pré-boil de aproximadamente 1.031.
6. Elevar a temperatura para 64ºC e manter por, pelo menos, 50 minutos, sempre fazendo o teste do Iodo. Beta-Amilase irá transformar o amido em maltose, o alimento para as leveduras. Após os 50 minutos, ou o teste do iodo estar quase bom, subiremos a temperatura para 68 graus nessa reta final, para não deixar a cerveja totalmente sem corpo.
7. Uma vez passando pelo teste do Iodo, elevar a temperatura a 78ºC (não passando 79ºC de forma nenhuma) e manter por pelo menos 12 minutos, para a inativação das enzimas.
8. Realizar o sparge (caso não tenha feito fly-sparge) e então a lavagem dos grãos, adicionando agua tratada a 80ºC até atingir uma OG pré-boil de aproximadamente 1.031, o que nos dará uma OG de aproximadamente 1.046.
9. Realizar a fervura normalmente, 60 minutos devem bastar, onde a primeira adição de lupulos será aos 15 minutos de fervura, 45 minutos para a conclusão. A proxima adição de lupulos será faltando 30 minutos para o fim da fervura.
10. Faltando 10 minutos para o fim da fervura, adicionamos a semente de coentro, triturada.
11. Faltando 5 minutos para o fim da fervura, adicionamos em uma hop bag as raspas de lima e de limão, e o capim limão. Adicionamos também, fora da hop bag, 1/2 unidade de Whirfloc.
12. Ao desligar o fogo, aguardar 10 minutos com panela fechada antes de tirar a hop bag com as raspas e ervas. Após aguardar os 10 minutos, faremos um Whirpool vigoroso com o mosto ainda quente.
13. Após feito o Whirpool, aguardaremos pelo menos 10 minutos (com o mosto tampado) e então iniciaremos a resfriar o mosto utilizando um chiller de contra-fluxo + gelo com o intuito de baixar a temperatura o mais rapido possível, em menos de 10 minutos.
14. Após atingir nosso target de 23~26ºC (Iniciando fermentação em temperatura alta), inoculamos um fermento previamente hidratado (WB-06) e levaremos o fermentador a geladeira, regulada em 21ºC durante os primeiros dois dias.
15. No terceiro dia de fermentação, abaixaremos a temperatura para 20ºC e assim seguirá até o termino da fermentação primária (duas semanas, FG estabilizada).
16. Fermentação secundária a 25ºC durante 3 dias, incrementando 1,5ºC/dia.
17. Cold Crash, geladeira no máximo (limite de 0ºC, na pratica será algo em torno de 6ºC) por, pelo menos, duas semanas. Iniciado o processo de maturação + Cold Crash.
18. Passadas as duas semanas de maturação (minimo), a cerveja será envasada com uma quantidade de 8g/Litro de açucar para primming durante pelo menos 10 dias, a temperatura ambiente.
19. Passado os 10 dias, só gelar e aproveitar a Lemon Soul Witbier.
Obs.: A FG desta receita está abaixo do aceitável na categoria WitBier, porém isso resultará numa elevada Drinkability, que é o real target da receita. |

Ziarna kakaowca ok 0,5kg podpieczone 10-12min w piekarniku. Laktozy ok 0.2-0.3kg(Słabo odfermentowało, więc poszło mało laktozy).

| Notes: This turned out great. Head holds the entire glass long. Make sure to pitch 2 packs of yeast. This finished fermenting at day 5 cold crashed down to 35f at 5 degree steps every 12 hours. Total crash after reaching 35f was 7 days. Crystal clear and very crisp. Enjoy. |

Notes: Yeast: Wyeast 3711 highly aromatic, peppery, spicy and fruity. I've heard online that citrus dominates. Enhances the use of aroma hops. Silky and rich (and dry?) mouthfeel from high attenuation.
Malts: Will use some Pilsen malt (not traditionally the biggest fan) to appease the style but will mix it with some light malt extract. Honey notes and pronounced maltiness from the abbey malt which will add complexity normally associated with Belgian ales. Carafoam for more body and head retention.
Hops: I would like the hops to be fruity and have citrus notes but I don't want it to clash with the yeast.
Centennial (60/40/0) Clean bittering. Floral and citrus aroma.
Amarillo (40/15/0) Floral and citrus.
Galaxy (Dry Hop) Citrus and passionfruit. Aroma quite intense at first, but mellows with age.
Brew day: May 4, 2014. Steeped 0.5 lbs of carafoam and 0.5 lbs of abbey malt for 30 minutes @ 74C.
I didn't see the late addition option in the fermentables section so I didn't incorporate it into my IBU calculation. I had originally shot for 25 IBUs...now I have 57. Oy vay. However, the calculation is based on adding the extract in the last 10 minutes. Mine was added more like 15 minutes, so the 57 IBU is more of a maximum. I still plan on dry hopping with 2 oz of Galaxy, but hopefully this isn't a hop bomb Saison. Now it doesn't fit BJCP guidelines, oh well! La Saison d'Oppy Amour.
Signs of fermentation 12 hours after pitching!
05/16: measured FG @ 1.012 - exactly where I want it! Took a sample and initial thoughts are that it has a spicy aroma and taste with a dry and bitter after taste. Hopefully dry hopping with 2 oz of galaxy hops for 10 days will impart some fruitiness to the aroma.
Took another sample on 05/29 and it tasted super sour. Maybe from all the citrus-y yeast and hops, especially the Galaxy in the dry hop? Hopefully it isnt an infection.
Bottling day: 06/03. Assuming 4.4 gallons to be bottled. Current temp of 23.2 degrees celsius. I did cold crash, but not for long, and it only got down to 16/17 degrees, so ill drop to 21. Shooting for 3.0 volumes of c02. Boil 5.13 oz of corn sugar.
Overall expectations: The first bottles will be overly citrusy, perhaps too much so, since the yeast is aroma-inducing. Suggest aging for a while to mellow out if the citrus/floral is too intense.
Sample on 06/13: First taste after a week in bottle and 24 hours in fridge. Overly sour and bitter, but this is not a bad thing. I like it. Michelle loves it. Very sour/citrus on the nose. Sharp, up-front bitter notes when tasting. Hopefully mellows well with time.
06/26: 3 weeks in bottles. Zero head. Could be dirty glass. Citrus aroma has subdued, but still present in taste. Tastes warmer (more alcohol) now.
A French-style Saison with large hints of fruit, including citrus and passionfruit, that makes this an easy-drinking beer. Perfect for those hot summer days.
08/07: 3rd last bottle - woah, foam immediately gushed out of the bottle as soon as I opened it. Bizarre. The others weren't overcarbed. I realllly need to mix the priming sugar with the beer next time I bottle. I can't think of another explanation. It's hard to taste anything other than the prickliness of the carbonation. Still rather spicy. At least its alcohol. |
