First brew was a success! A bit too red in the color, not exactly carrot juice but too red/dark.
According to "The New IPA" by Scott Janish, DH with > 1-1.5oz/gal is overkill. Testing 200g DH for the first batch.
Lactic acid to get mash to pH 5,2-5,3
Target ion levels for O/O's Narangi:
Ca: 150 mg/L
SO4: 150 mg/L
Cl: 150 mg/L
When using liquid 33% Calcium Chloride (which I do) use 3 times the weight of the anhydrous Calcium Chloride:
6.5*3=19.5 33% liquid CaCl
1ml 88% lactic acid = 1.21 grams

Notes: Steep grains and gypsum in 4.5 gallons of water until water reaches 170 degrees; remove grains.
Boil for one hour.
At 60 minutes, add kiwis. Stir for 2 minutes to whirlpool. Let rest for 20 minutes.
Chill wort to 70-75 degrees. Fill fermentor to 5 gallons.
Pitch yeast.
