Notes: This batch employed a Hochkurz Step Infusion Mash.* Dough in with hands for very thick acid rest at 100°F for 20 min. Infuse with boiling water for protein rest to reach 122°F for 25 min. Infuse with boiling water to reach 145°F for maltose rest/conversion for 35 min. Infuse with boiling water to reach 158°F for dextrinization rest until negative iodine test. Mash out at 167°F before lautering. Collect 8 gal wort, full volume is at 10° Brix before boil.
* All added water volumes are rough estimates. Temperatures were achieved with infusion of near boiling water at each stage. Acid and protein rest were very thick. Later rests were thinner to get better conversion.
Bring wort to boil for 30 minutes before hop addition at 30 min. Take off boil at 90 min. Brix off burner is 14°.
Bring volume to 50 degrees overnight before pitching yeast...collected ~ 5 gallons. Need to work with efficiency some more. Always have DME on hand and brew for 6 gallons so I can lose cold break. |

1lb 8oz flaked oats.
1lb munich malt.
12oz crystal malt 40L.
6oz chocolate malt 350L.
5oz roasted barley 300L.
5oz roasted barley 500L.
1oz first gold hops @8% AA. boiled 60 min (30ibu).
0.25oz east kent goldings @5%AA. boiled 0 min.
irish moss boiled for 15 min.
2.3 volumes of CO2.
wyeast 1968 (london ESB) or white labs WLP002 (english ale) yeast.
mash @ 154f for 45 min. mash out @ 168f. boil 90 min. pitch @ 65f and hold for 3 days. rise temp to 68f over 14 days. crash @ 32f for 3 days.
substituted yeast for S-04. Not sure what roasted barley was sold, for recipe I combined the amounts. substituted first gold hops for 1.1 oz cluster. |

Notes: The original recipe does not call for the sugar or the mosaic hops and Belgian yeast these are the changes I made to the recipe.
I used a Normal cooler homemade mash tun for steeping. Also use a paint strainer bag from mash tun to boiling pot then from boiling pot to fermenter to clear out other heavy left overs. The original recipe yeast was English Ale but I had Belgian on hand. |
