Notes: Add late additions during the last 30 minutes of the mash.
For coffee, grind 6 oz. coffee beans (medium coarseness), add to 3 cups water, and refrigerate 24 hours. Strain through a coffee filter into the kettle after boil is complete.
For vanilla beans, slice open 1 vanilla bean pod, spread open and scrape seeds/innards with a butter knife into 2 oz. vodka. Let stand 2 weeks, then strain through a coffee filter into the secondary fermenter. This recipe only calls for 1 oz., so save the other half for another brew! |

Notes: Single-step infusion mash at 150°F (66°C) for 60 minutes. Boil for 60 minutes. Pitch the yeast and ferment at 68°F (20°C) for a week or until the final gravity is reached.
Before you rack to secondary, make a vodka tincture with the orange zest and ground star anise, using just enough vodka to cover the spices. Let the tincture sit for 30 minutes, then add it as you transfer the beer. Let the beer rest in secondary for a week, then keg or bottle. |

6oz oak chips (boil 15min) - French oak is less 'oak-y'
7 day soak in Bourbon (enough to cover chips)
4 weeks from serving, add chips (Pour out the soaking whiskey)
Add 24oz fresh Bourbon with chips
(flaked barley is used for head retention + slight grain flavor)
1st 5gallons - drinking 'green' after 9 weeks - ( it's already mellowing after week 11 ( 2weeks in keg) - oak was pretty intense and tannin high initially - not very alcohol balanced - it's much better now but still a bit dark choc bitter for my palate
2nd 5gallons - age at 45degF until 6 months (compare results) |
