Same profile for HLT; chalk made the water very cloudy. Lots of chalk residue; must be a better solution.

Slightly stuck mash at 9:15; twisted paddle at bottom to open it up.
Got it going again, but it turned cloudy again. Then continuous stuck/slow mash circulation/runoff. Also had big variances in temperature. Future procedure should be to stir mash until time for run up to mash out. Rice hulls may help, too.

Fermenting started at 69'
Bubbles by early evening
Three days later, bubbles tapering off. 10.5 brix on refracto, 1.021 adjusted SG, 7.6% abv. Brought temp up to 71', then 72' then 73' by the end of one week. Now reading 10 brix, 1.018.
Was hoping for more attenuation, since last tripel with similar recipe and same yeast made it to 1.010. Maybe adding one more yeast pack and making a bigger starter would help.

Notes: New experiment different specialty grains for variations on old favourites. Results based on past experiences with Trippels, Altbiers and Kolsch styles.
Yeast Experiments complete. Probably 500/1214 is still the Belgian yeast to beat for our chosen application. WLP500 in one primary, Scottish ale yeast WLP028 in the other.
Will be split between 2 primaries, each receiving a starter of a different strain that can do work up to 24+ degrees C.
wyeast 3522, and wyeast 1214.
- at the end of sparging that not exceeding 168–170 °F (76–77 °C) is the most important. if its lower, not the biggest deal, potential loss of probably .2 to .4 ABV absolute max using room temp water in a light sparge. w/e.
- since hop additions are mostly in pellet form, will need to whirlpool after cooling for ~45 minutes, then siphon the wort off the trub in the kettle.
NOTES FOR FUTURE VERSIONS: Scotch Ale yeast overcarbonates with bottling sugar so calculate it for 1.5 units CO2. Belgian try 1.8 units (2.0 was too high) |

We look for a beginning of boil gravity of 15.7 and boil for 70 minutes to target 16.3 at the end of the boil.
Hops
Magnum - 6 IBU at 98 C
Simcoe - 5 IBU at 15

Before end of boil Amarillo - 10.7 IBU in the whirlpool
We cool the wort to 19C and let it rise to 21C. We ferment at 21 until we reach 7 Plato at which point we temp up to 23 for the remainder of fermentation. Ending Plato is 2.2.

Amarillo .089 kg/bbl
The yeast we use for Tank 7 Farmhouse Ale is our house Belgian strain. For homebrewing purposes, we recommend Wyeast 3787 to approximate our house yeast character. |
