Notes: Heat 3 gallons to 150 degrees. Add steeping grains and maintain temperature for 30 minutes.
The total wort boil time is 60 minutes. Add the hops once the wort begins to boil and again with 30 minutes remaining. Add 1/2 tsp Irish moss with 15 minutes left. Chill the wort rapidly to 60 degrees, let the break material settle, rack to the fermenter and aerate thoroughly.
Use active 1500 ml (150 g Bavarian Wheat DME) yeast starter. Ferment at 60 degrees. Allow the beer to lager at 35 degrees for at least four weeks before bottling or serving. When finished, carbonate the beer to approximately 2.5 volumes and serve at 50 degrees.

Notes: Yeast pack is Best By Jul 19, 2023. Assume mfg'd on 1/19/2023, therefore, yeast is 54 days old, and 62% viable. Need a 1L starter (per calculator). Make yeast starter 2 days prior to brew day, by boiling 1000mL of water with 1/2 tsp yeast nutrient and 3.5oz DME for 15 mins. Chill to ferm temp and pitch yeast, aerate using stir plate.
Mash/steep grains in 2.5 gals spring water at 152F for 60 mins.
Rinse/sparge with 0.5 gal water at 170F.
Top off with 1 gal boiling water, and bring brew kettle to boil.
60 min boil
Add hops/extras per schedule
- 1/2 of DME at 15 mins into boil, remaining 1/2 DME at 15 mins left
- Add candi syrup with 15 mins left in boil
Chill to 70F using wort chiller, and auto-siphon into 3 gal carboy, pitching yeast (carefully pour off wort on top), aerating, and insert blow-off tube. Ferment at 66F until FG is reached.
Consider xfer 1 gal into 1 gal carboy with bourbon-soaked oak chips to age for NNN months, and bottle the rest

Instead of addind water after boil for target batch size, i'm boiling with more water for an hour instead of adding water at the end (i use tap water that need sterializing anyway...)]
At 15 min of boil, add 0.5 oz of crushed Coriander and 0.5 oz of Bitter Orange Peel
Add crushed apples on peak of first fermentation.

The mini-mash steeping time is 45 minutes at about 155 F. Drain bag and sparge. Bring wort to boiling and add malt extract. Bring back to boil and add 1 oz Strissel Spalt hops. (Note: Boil is only 30 minutes.) At 15 minutes add Coriander and bitter orange peel. At 5 minutes remaining add 0.5 oz Strissel Spalt hops. Cool down, add water for 5.5 gal, pitch yeast, and seal it up.
I added the apples on Day 3 of primary fermentation. I peeled, cored, and diced the apples before putting them in a sturdy zip lock bag and partially freezing them. The partial freezing makes the next step easier. Crush the apple chunks, let them thaw completely, and add to the wort. |

Notes: Pour 3 gallons of distilled water into brewing pot. Put on medium heat.
Place grains into mesh bag and steep the grains into the water. Steep for 30 minutes at mid 150 degrees
Run a bit of distilled water through the grains into the pot.
Bring to a boil. Once boiling, start timer for 60 minutes and add 1oz of Hallertau Hersbrucker hops.
At 45 minutes pour in liquid extract malt and stir for 10 minutes.
At 15 minutes add 1oz of Saaz hops
At 10 minutes add 1 teaspoon Irish Moss(Whirlfloc)
After 60 minutes add 0.5oz of Hallertau Hersbrucker hops and 0.5oz of Saaz hops, take off heat source, and cool the wort to 100 degrees as quickly as possible. While cooling, sanitize fermenting bucket and any equipment needed to transfer the wort.
Fill the primary fermenting bucket with 2 gallons of cold distilled water. Add the wort, leaving any trub at the bottom of the pot. Add additional cold distilled water to reach 5 gallons if necessary.
Seal the bucket and aerate the wort for about 5 minutes.
Take gravity reading and record.
Once the wort is at 70 degrees or lower, pitch the yeast.
Seal the fermenting bucket and insert the rubber stopper and fermentation lock. Make sure to put 1 tablespoon of water in fermentation lock.
Place in dark cool place and let sit for 7 days. Check and record gravity.
Once gravity is idle for 2-3 days it is ready to add the fruit. Thaw the fruit, and drain most, but not all, the water after thawing. Mash the fruit enough to open up, but not crush completely. Do not drain after mashing the fruit.
Place 3/4 of the mashed fruit at the bottom of the secondary fermenting bucket, and then start racking the beer from the primary. About 3/4 of the way add the rest of the fruit, and then finish racking the rest into the secondary.
After fruit and beer is in the secondary, let sit for 1-2 weeks. Taste with sanitized spoon every other day after 1 week until desired taste has been reached.
After desired taste is reached, its ready to be bottled. Sanitize all bottling equipment. Transfer beer to bottling bucket while filtering out the fruit. Use muslin bag over over bottom of racking cane to filter beer.
Place fizz drops in bottles before filing each beer.
After bottling let the beers sit in a dark room temperature spot for 2-4 weeks. After this period they can be stored cold. |
