Notes: An English-style IPA, Fuggles is buttery, creamy, earthy, and aromatic. Much of its character comes from the distinctive Ringwood yeast, but even more distinguishing is the use of only Fuggles hops.
Hint: with the last hop addition at flame out, cover and steep the hops for 15 minutes, then wort chill rapidly down to 68 degrees.
Ferment for 7 days at 68 degrees, transfer to secondary and dry hop for 14 days. Add Gelatin (optional) 3 days before bottling and cold crash to clarify beer. Prime and bottle. Condition at 70-72 for 21 days, chill 3 days, enjoy!! |

After flameout, chill the wort down to 65 °F (18 °C) and pitch the yeast. You can then place in a warm space to allow fermentation temperature to start to rise to 72 °F (22 °C). Hold at this temperature during active fermentation. When active fermentation begins to settle down (kräusen begins to fall), increase the fermentation to 78 °F (26 °C) to be sure the yeast fements to completion. |

Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 180F. 90 minute boil. Cut flame and chill immediately to 175F, add 0 min Aroma hops, sit for 5 min and then continue chilling to 66F. Pitch and ferment at 66F. First dry hop addition goes in as soon as krausen falls. Cold crash to 40F after fermentation is complete, fine and transfer to secondary. Add second dry hop, 2 days later add third dry hop, filter and bottle at the end of day 4. Bottle and condition at fermentation temps for 7 days. Drink fresh! |

Original recipe uses Crystal 120L and Crystal 40L and dark munich. However, UK chocolate is apparently a lot darker so this is coming out the same colour.
Original recipe suggest 10ml per 473ml of beer and 2 vanilla pods for 7-14 days
If bottling 21L that is 444ml bourbon.
I think it might be a good idea chop and scrape the vanilla pods and soak in some of the bourbon (for sanitisation). Then add the whole lot to the primary. This is going to extract some flavour, so should probably be counted in the steeping time.
So: 2 vanilla pods scraped in 200ml bourbon for 2 days. Chuck the lot into primary for 12 days, then bottle with another 244ml bourbon and priming sugar.
