Mix
1L water Zest + juice of 2 limes and 2 lemons and 4 oranges
12 cinnamon sticks crushed up
4g nutmeg
32g coriander
100g bitter orange peel
1.1L Cherry Cola Fentimans+ 100g sugar for priming

Boil everything except the juices for 2 mins and and then add juices.

Question about the sequencing: does everything in the “mix”:

1L water Zest + juice of 2 limes and 2 lemons and 4 oranges
12 cinnamon sticks crushed up
4g nutmeg
32g coriander
100g bitter orange peel
1.1L Cherry Cola Fentimans+ 100g sugar for priming

get boiled and then thrown in with the primary fermentation, or is added in at the last minute of the boil?

Also, does the pound of sugar in the fermentables part of the recipe get boiled as well?

Finally, at what point do you add the vanilla essence?

Prior to fermentation I did not feel like the cherry flavor was forward enough. I left the cherries in for two weeks during primary fermentation. Not sure if it was that or all of the cherry juice from the recipe, but felt like the cherry component was overpoweringly tart and covered up the cola flavor. Added two bottles of SodaStream cola mix to sweeten. More balanced now but still too much cherry for my liking. If I do this again I will decrease the amount of cherry juice and not leave the cherries in for fermentation. Of note, my batch was half the volume of the recipe; ingredients adjusted accordingly.
