Notes: Toasted Pale 2-row malt, fire-kilned to approximate brown/speckled color.
Kilned over a low cherrywood chip fire for approx 3 hours.
OG was about 1.060. Will check FG soon.
Tasting notes: not very "Grassy" or "seedy" like most bottled porters. Appropriately mild hops, the kilned malt really does a good job in providing a nice bitter and rounded balance. Nice, coffee-like finish, lasts over 30 seconds. |

| Notes: Yeast is of the utmost importance. I have a starter from Crooked Stave's Vieille, good source of brettanomyces. With that I will dump dreggs from Oddwood Ales Saison to impart sacch. strains, as well as pedio., and lacto. strains. The second dreggs will be from Timmerman's Oude Gueuze, lots of great critters living in there. Whether or not this will create a great sour will be determined in a year or two. |

Notes: Ferment with normal pitch of Trappist HG, and then one day later pitch both 1098 (English Ale) and 3711 (French Saison) to improve esters.
Add brown sugar and Belgian Candi sugar at 1 minute.

Notes: The last attempt of this recipe was really good, so as usual I'll have to throw a spanner in the works and try to mix it up a bit.
Instead of wheat malt, I subbed in Triticale Malt which apparently is like a characterful wheat malt (we'll see!) and instead of doing a kettle sour, I'm trying the Phiily Sour yeast that creates lactic acid during fermentation.
Mashing low to try and get more glucose in the wort to make the Philly Sour produce more sourness.
I'm also trying to see if a 30 min mash and boil still makes a good beer.
Update: It was way too sour at the low mash temp (64) so I put two small cans (400g each) of tinned apricots and a small tin of apricot nectar after the cold crash and let it sit for a day or two before racking into the keg. I don't normally like sweet beers but it turned out really good. |

Notes: An English-style IPA, Fuggles is buttery, creamy, earthy, and aromatic. Much of its character comes from the distinctive Ringwood yeast, but even more distinguishing is the use of only Fuggles hops.
Hint: with the last hop addition at flame out, cover and steep the hops for 15 minutes, then wort chill rapidly down to 68 degrees.
Ferment for 7 days at 68 degrees, transfer to secondary and dry hop for 14 days. Add Gelatin (optional) 3 days before bottling and cold crash to clarify beer. Prime and bottle. Condition at 70-72 for 21 days, chill 3 days, enjoy!! |

Very clean and thin body. Good citrusy smell. Lemon and candy fruit taste.
Next time mash higher, me thinks.
Update: 4/30 - Got Runner up BOS at local tasting. Lots of compliments and perfect for summer. Easy drinking and very little alcohol warmth for such a high ABV beer.
Personally, I doubt I will make it again. Decided the nondescript sweet nature of mosaic is not my thing haha. Azacca seems lost in the mix. Decent fruity nose and taste, just nothing pops in my mind.
Also planning on retiring Warrior from my bittering selection. Find it much harsher than Magnum, even when used as a FWH. |
