Next time make a thinner mash. Maybe 4:1 water to grist ratio. Missed my target, so added a 1 lb 6oz of dex near the end of the boil to achieve 1.094. Final gravity hit right on target. Pre-carb tasting is super rich chocolatey. Hop presence could be stronger but will update once its carbed. |

Blackberries are in the form of juice after they have been run through a juicer. I started with 12lbs which I got 1 gallon of juice. This takes the seeds out of it which might add tannins. |

Notes: Trying for my first Low Alcohol beer. Would like 0.5% if possible but may struggle to get it as low as that.
Method for reduced ABV
Small grain bill.
Mill the grains a bit Course
Mash Temp 80 C which will reduce conversion
Weyermann Malts have less converted starches.
Lallemand Windsor yeast also convert less sugars than others.
Hop choice to replace loss of flavour from reduced grains.
Achieved
81% efficiency. Was hoping for much less.

Nice soft smoke and mouth feel. Dry but not thin. Smoke very much in background.
I changed the style category as the smoke pretty much fades into the background and is not the dominant ingredient.
I also split the batch and refermented with Brett B. The smoke is barely detectable.
