Notes: AHA's Big Brew Day 2020 Recipe:
This year’s Big Brew recipe comes from Jackalope Brewing Co, which will brew Pangaea Proxima Polar IPA as the official commemorative beer for Homebrew Con, to be held June 18–20, 2020, in Nashville, Tenn. Given that homebrewers from all over the globe will be brewing a version of this beer on May 2, the recipe features ingredients that truly fit the theme of Big Brew.
“We want to use ingredients from all over the world to brew this beer. We decided to use the kveik yeast because what a dream that is for a homebrewer,” said Bailey Spaulding, who is a cofounder of Jackalope and will deliver the Keynote Address at Homebrew Con. “Then we landed on using New Zealand hops for the beer,” she continued, “so the yeast is from an area of the world near the North Pole, and the hops are from an area near the South Pole.”
The beer is named after Pangaea Proxima, which is a theorized future supercontinent that would form 300 million years in the future. “We thought it fit the idea well. Also, we really like the idea of bringing people from around the world together in a time when we are all so separate.”

162 strike water, 9.5g (7.7g pre boil + 14lbs grain *0.125 grain absorption) RO strike volume, 1tsb gypsum per 5g water
To brew the Left Hand Milk Stout clone, mash at 151°F (66°C) for 90 minutes. Boil for 90 minutes, following hop schedule. Add lactose 15 minutes before end of boil.
Ferment at 70°F (21°C), then condition in secondary at 60°F (16°C) for at least one week.
0.3 oz (8.5 g) Magnum pellet hops, 13% a.a. (60 min)
1 tsp irish moss (15min)
lactose (15min)
1.0 oz (28 g) E.K. Goldings pellet hops, 5% a.a. (10 min)
No sparge:
2. Heat 9.5g RO strike volume to 162
3. dough recycle 90 mins at 151
4. add 2tsb gypsum to mash (1 tsp per 5g RO water)
5. after re-circulation 30 mins, stir, but turn pump off first! i stirred and clogged everything!!! dont disturb the grain bed.
6. after 90 mins, heat up mash to 165–168 °F range. Stir while heating for even heat distribution. After get to 165, recycle for a few minutes to set the grain bed. Slow the flow to not suck up too much grain. Drain to boil for total of 7.7g.
7. Boil. Add hops. Don't forget 1tsp Irish moss last 10 mins and boil chiller last couple minutes to disinfect.
8. Cool. 2 bags ice for cooler or several frozen water jugs.
9. If can't cool all the way (in the summer), bring inside, let cool overnight. |

The beer is boiled for 90-95 minutes to reduce boil size and add it to the 4 litre starter. Because of this, density calculations are approximate.
Before fermentation: 24 litres
After 3 weeks fermerting: 20,5 litres. Several litres lost while moving the beer from first fermenter to secondary fermenter, most of it dead yeast.
Priming sugar: 20,5 litres * 6g/litres = 123g (125 g effectively)
