Notes: First time I try using flaked wheat. Next time I should get some enzymes or 2-row malt to convert the flaked wheat.
Smell of zesty orange peel. Delightful fresh taste with with good body. Copper colour, with taste notes of freshly crushed coriander seeds. Head is aggressive on the pour due to high carbonation, but settles comfortably after a few minutes.
>malt extract can be light or extra light
>yeast should be Belgian Wit (wheat) beer type
>use light honey
Directions for 5gal batch:
O.G.: 1.056-1.060
F.G.: 1.008-1.010
Bitterness: 18BU
Colour: 4SRM (8 EBC)
Alcohol: 6.3% by volume
Add malt extract, honey, and boiling hops to 7.5L water and boil for 60 mins. Add the Irish moss, flavour hops, and half the ground coriander for 10 mins. Add the remaining ground coriander and orange peel for the final 5 minutes. Add the aroma hops for the final 1-2 minutes of boiling. Strain, sparge, and transfer immediately to 7.5L of cold water in the fermenter. Top off with additional water to make 19L. Aaerate the wort very well. Pitch the yeast when the temperature of the wort is about 21C. Ferment at about 21C for about 1 week or when fermentatino shows signs of calming and stopping.
Prime with sugar and bottle or keg when fermentation is complete. For added attraction add one whole coriander seed to each bottle when bottling (microwave them if worried). |

Notes: • Steeped grains in 3 gallons water at 150° for 30-minutes. Then gently squeezed bag and put it in a strainer over the kettle. Poured 2 quarts of 150° water over it to rinse any extra sugars or flavors into the kettle - sort of a mini-sparge.
• Raised heat up and mixed in half of the LME as it was heating. Then brought it up to a boil and took it off the flame to stir in rest of LME. As soon as I got it back to a boil I started the timer and added the bittering hops.
• Only pitched 1/2-oz of aroma hops at 3-minutes to end of boil, which was a mistake - should have been a full ounce. As a result the aroma wasn't all it could of been, but the taste was excellent.
This stout had far less trub and residue than any other brew so far. Was significantly less trub in the bottom of the kettle than in my previous brews. Also less in bottom of primary fermentor when I racked it into secondary fermentor. And even less in the secondary when I bottled it. After 4 weeks bottle conditioning, there is so little if any residue in the bottom of bottle that I don't worry about pouring it all into a glass. Other brews I am very careful to leave that last 1/8" to 1/4" in the bottom of the bottle.
• Carbonation was a long time coming with this stout. At 2-weeks in the bottle, carbonation was low. 3-weeks was better and what I would call drinkable but not excellent. 3½-weeks seemed to make all the difference in world and at 4 weeks it was great. Bummed me out because I had to wait an extra 2 weeks longer than normal for this beer to be ready. So don't be surprised if it takes 4 weeks in the bottle.
• This stout was much darker than shown above. It's basically the same color as a Guinness.
• Original Gravity before pitching the yeast was 1.042
• Final Gravity was 1.014
• ABV was 4.3%
• IBU came out to 32 not the number shown above.

Notes: 11.11.18 Christian helped
Unusual brew day, as we made an error with heating the mash, so we ended up having the beer at almost 162 F, way out of what we wanted! We hope that it doesn't ruin the beer.
At 60, 152 F
At 51, 151.7 F
At 30, it was 162!!! Because we put it on the burner.
PH of 5.4 for the Mash
PH 5.52 for the sparge water
BF predicted 5.5 while Braun Water predicted 5.25. But I did add a bit more water due to the overheating issue, so in practice it looks like they're right in between.
Note that the water report says it is too bitter based on the water profile. I should think about adding CaCL next time.
OG: 1.046
14.11.18 Saw something weird floating in the beer... I tried the beer it tasted strange I need to do a fuller tasting tomorrow to see if it'll be okay.
15.11.18 Dry hopped with Belma, Galaxy, and Citra. Tasted the beer, a bit maltier on the tongue than should be the case. But it could be salvage-able. |
