Notes: Directions:
Water Treatment: RO water with 1 tsp calcium chloride added to mash. Single infusion mash at 152°F for 60 minutes. No sparge batch, so all brewing liquor added to mash then drained. Chill to 68°F and pitch yeast. Ferment at 64°F.
Dennis Mitchell of Chandler, AZ, member of the 2019 NHC Homebrew Club, the Arizona Society of Homebrewers (ASH), won a bronze medal in Category #9: Scottish & Irish Ale with an Irish Red Ale during the 2019 National Homebrew Competition Final Round in Providence, RI. Mitchell’s Irish Red Ale was chosen as a top three entry among 222 entries in the category. |

Notes: Dough in slow. Add grain add water mix well. Do this two or three times. Layer in oats.
Late addition honey last 15 minutes to boil.
Add 1 lb crushed unsalted pecans in a bag (dry hop) to 1st rack.
Aerate the wort.
Last rack in a bucket. Airlock bucket. Set outside (freezing temps). Each afternoon remove ice from top of bier. Remove ice for how ever long you want. I do 1 week.
I would suggest not letting finished bier getting above 65 degrees.
