Notes: The late addition 4 oz of DME (I had wheat on hand - use whatever) is added to 2 qts water in separate pot during the mash, and boiled down to one pint or cup even (reduce by 75%, or more even, to create “kettle caramelization” Maillard reaction flavors), then added into main boil toward the end.
Use yeast slurry from previous batch (mine from Best Bitter I’m kegging same day), or build big enough starter for big beer. Oxygenate adequately. Start fermentation at 64° for about three to four days, then raise to 66° for two, 68° for two, and then 70° to finish off... |

Notes: 90 minute boil but 60 minute hop schedule.
With a 90 minute boil, it would be good to calculate the evaporation rate and get a close Boil Volume. ElectricBrewery says they lose 1.9 gal/hr
so 12.5 + (1.5 X 1.9) = 15.4 gallons. 15.5-16 gallons seems reasonable.
Effed up sparge and ended up with 14.5gal in the boil.
Boiled down to 12.5 in 90 minutes. Lucky me.
OG looks like 1.07ish. I guess still 72% efficiency with a slow sparge.
Fermented at 70 for 5 days.
After bubbling slows to steady rate, turned up to 72 degrees.
After a total of two weeks, I cold crashed to 40 degrees for 48 hours.
Then warmed it back up to 68-70 degrees and dry hopped 2oz Citra.
Kegged four days later. Final Gravity looks accurate.
First impression: aromatic hops not present enough with just the single 2 oz dry hopping. Galaxy + Citra's aromatics definitely make it through. 1 oz of a complimentary dry hop might be good next time.

Difficulty in cooling down. Ended up pitching at around 70degrees. The near frozen bottles of spring, froze and split so I had to buy new and freeze.
Decent bubble just not vigorous. ON racking after 8-9 days, FG was closer to 1.020. Incredibly cloudy and full of shit (tangerine rind and hops and yeasties. Difficulty siphoning. Had to clear hose and valve several times. Tried to sterilize at every point but difficult.
Racked again after another week. Added 1 tsp gelatin to 2/3 cup water. Valve was open and I lost about a beer's worth. Crap. Added another tsp to 1/2 cup and siphoned remainder. Clarity was better, no chunks but still hazy. We'll see how gelatin works. FG is now 1.015.Taste was decent with that hint of orange but I was tainted by the thought of all that went wrong...
Learnings - Freeze water bottles but watch for over freezing. Use ice bags for the cooling of the wort still in the kettle. Quick chill at all costs (or not sterilization).
