Notes: For single-stage, mash in at 66C/150F for 70 mins. For multi-rest, mash in at 50C/122F, raise to 62C/143F and hold for 60 mins, heat to 72C/161F and hold for 10 minutes. Mash out at 78C/172F

10-12C/50-54F until halfway through fermentation, then 14C/57F till the end. When active fermentation is complete leave at 14C/57F for another 72 hours to reduce the diacetyl. After the diacetyl rest is complete, rack on to the dry hops in a separate vessel. Beef up with up to another 2g per litre (0.3oz per gallon) of more of the dry hops if you want to boost the aroma. Continue to hold the beer warm for another 24-48 hours. Then lager it in a beer fridge for approximately 2 weeks

Notes: Mash grains at 152°F (66°C) for 60 minutes. Mash out at 170°F (77°C) for 10 mins. Add Irish moss at last 15 minutes of boil. Add honey at end of boil. Cool, aerate and pitch large starter of yeast. Pitch yeast at 72°F (22°C).
Primary fermentation for 8 days at 65°F. Rack to secondary for 10 days at 65°F.

Notes: Use a two-step mash with a protein rest at 122°F (50°C) for 25 minutes, followed by a main rest at 152°F (67°C) for 90 minutes.
Pitch yeast at 62°F (17°C), hold at that temperature for 24 hours, then drop to 50°F (10°C) and hold for 20 days. When fermentation is complete, raise temperature to 65°F (18°C) for a two-day diacetyl rest, then drop to lagering temperatures for one month or more.

Notes: grab some wheat from choppe: and find that yeast somewhere. Then good to go: fun ex-beeriment! consider splitting into two fermenters... 2 yeasts: one temp controlled, one not so much, or even both small totes with different temps...
If so, consider upping volume to get at least 12 L in each one (to make use of that precious carboy real estate).
Naw: just do this. Looks like this yeast is a winner for hoppy wild ipas.
