Notes: Extra Ingredients:
2 ounces French Medium Toast Oak Beans Soaked in Chardonnay for 6 months
Special Instructions / Notes:
First appears in Everything Homebrewing Book.
After cooling, pitch only the Belgian ale yeast. Begin soaking your oak in Chardonnay.
Transfer the beer to secondary and pitch both Brettanomyces strains and add about a quart of basic starter beer to give it some extra food. Walk away for 6 months.
After 6 months, taste the beer, if there's enough “funkiness” for you, add the oak beans (sans wine) and age for 2 to 4 weeks and then package. Your beer should be at a low terminal gravity (around 1.008) to prevent bottle bombs. Carbonate highly and enjoy. |

♦♦ Use 3 Vials of San Francisco Lager Yeast WLP810 @ 62°
WLP810 San Francisco Lager Yeast.
This yeast is used to produce the "California Common" style beer. A unique lager strain which has the ability to ferment up to 65 degrees while retaining lager characteristics. Can also be fermented down to 50 degrees for production of marzens, pilsners and other style lagers.
Optimum Ferment Temp. 58-65°F (14-18°C)

♦ Northern Brewer Hops - Origin and Description
Northern Brewer Hops is an England native who is seeing its days live out mainly in Germany and the U.S. There is a separate U.S. hops variety that was bred in the United States that has similar properties. This dual use hops had a higher alpha acid content for the time, however super alphas have doubled, even tripled the content since back in the day. With that said Northern Brewer hops grown in Germany, sometimes referred to as Hallertau Northern Brewer if grown in the region, has made its mark and is used throughout beer styles such as European Ales, Lagers, and Pilsners. It is also synonymous with steam beers as in Anchor Steam.
Northern Brewer hops is used for both bittering and aroma additions in the kettle. It has an alpha acid content of 7.0%-10.0% and is a well rounded variety. The bitterness is moderate and the aroma comes off as plump. As one of Germany's main high alpha hops, Northern Brewer is both versatile yet refined. |

STARTER
1) Determine the appropriate starter volume to achieve the target number of viable yeast cells for your beer. Remember, you can use an online yeast calculator like the one linked above to quickly determine these variables.
2) Use 1 16-oz can Propper Starter per target liter of starter into vessel and add enough water to reach target starter volume OR
a) Weigh out 1 gram of dry malt extract for every 10 milliliters of target starter volume.
b) Add the dry malt extract to the vessel you will be boiling in.
c) Add enough water to the boil vessel (dry malt already added) to reach the target starter volume.
d) Add about 1/4 teaspoon of yeast nutrient to the boil vessel. You can use slight less for starters under 1-2 L and slightly more for ones larger.
3) Bring to a gentle boil for about 15 minutes. Keep the boil vessel covered to maintain as much of the volume as possible.
4) After 15 minutes, allow the wort to cool.
a) If needed, transfer the liquid to the vessel that will hold the starter. (Note: As with beer, anything that comes into contact with the starter wort post-boil should be properly clean and sanitized).
5) Pitch yeast into the chilled starter wort.
6) Use a stir plate or intermittent shaking to add vital oxygen to the starter.
7) Pitch into beer once ready!
