Notes: Brewed 12/05/2015.
Intended to bottle on 1/16/2016. The beer finished just above 1.020, but tastes very sweet. It's undrinkable like this; I can choke one down if I mix with something else. I racked it to a smaller carboy and added some amylase enzyme because I've been told that can restart a stuck fermentation, but I'm doubtful.
It did start fermenting again after adding the amylase. BTW, I think my LHBS ordered coffee malt for me instead of brown malt. That would explain why this beer is inky black.
1/20/2017: I just drank the last bottle of this. After aging for about a year it was really good, just served it a little colder than normal for this style to mask the sweetness (which has subsided.) I'm sad it's gone, and I will brew it again soon (using real brown malt next time, and fermenting a little warmer which T-58 likes so it attenuates better |

In the 2022 Greg Noonan Memorial Homebrew Competition, this beer took 1st place in it's category, 3rd in Best of Show, and won the Vermont Pub & Brewery's Brewer's Choice award to be brewed as a full-scale production batch to brewed by Black Flannel Brewing and be served at the Vermont Pub and Brewery and Black Flannel. |

Notes: No boil, just bring to a boil, cool to 35 Celcius, sour w LActic acid and ProbiMage when transferring to fermenter. No aeration. Went down to pH 3,8 pretty quick.
Pitched 05 after 24 hours of souring directly in fermenter. Shaked fermentor as way of oxygenizing. Probably not enough. Next time treansfer with aeration to another fermentor.
Grapes in after stormgjæring/primary fermentation. MAshed, with juice and all in a mashbag in the fermentor.
Fermented down to FG 1.014, so bottled w 6gr/L just to get a good fizz.
Colour is gorgeous. Taste quite tart but subtle grape hint. |

| Notes: Mash pale malt and flaked barley in low-alkalinity water (acidify as necessary to produce a mash pH of 5.3–5.5) at a temperature of 146–150° F (63–65° C) for 60 minutes. Add roast barley to mash at the end of mashing period. A mash out step to 168° F (76° C) is helpful, but optional. Sparge the mash with low-alkalinity water that is acidified to a pH between 5.2 and 5.7. Boil the wort for 60 minutes. Minimal brewing salts are desirable in the water. As a starting point, when using reverse osmosis (RO) or distilled water, add a half-teaspoon of both gypsum and calcium chloride per 8 gallons (30 L) of water, or use a program such as Bru’n Water to guide the mineral and acid additions. |
