Notes: Like most lagers, I'd give this 2 months from brew day before serving. 1 month in the fermenter (dry-hop at the end if you're going that route) and another for lagering.
1388 takes a long time to drop out, even with gelatin.
I serve this about 2psi higher than normal (flow control helps). There will be foam, but a nice fluffy head is to style and there should be a bit more prickly carbonation. |

Notes: Base Recipe based of Boulevard's Harvest Dance. Recipe came straight from Boulevard.
Aged in 30 gallon used Dark horse Rye Whiskey barrel that was previously used by McCoys for Ursa Major. Some whiskey aroma and stout aroma.
After a month in the barrel pellicle started forming. Aroma was fruity and barnyard. Started to feed dregs of brett and sour beers for the next 4 months.
Beer thinned out but Brett flavor and aroma dominates in a great way. Has some lacto tartness |

Notes: WLP007 - Dry English Ale yeast. Love this yeast for IPAs: it ferments clean, fast, and drops super clear, super quick. Fermented at 62F for 6 days, then raised the temp to 68F for 8 more days to help the yeast finish up.
Dry Hops:
Racked to secondary then:
4oz Amarillo/Citra/Centennial/CTZ (1oz each) for 5 days
3oz Amarillo/Citra/Simcoe (1oz each) Added day 5 for 4 more days
Rack to bottling bucket/keg on day 9 in the secondary.
The recipe for this beer started off as something close to Pliny, and evolved into the recipe above. I love using Amarillo, Simcoe, and Citra together, especially for dry hopping.
Tasting Notes: Aroma is heavy citrus and tropical fruit with lots of oily, resiny character. Taste is more of the same. A little malt sweetness up front, then boom: Hops. Finish is dry and bitter, but the bitterness isn't harsh and doesn't linger.

Hop schedule is Fullers.
Efficiency all whacked out on Brewersfriend..and yeast did not attenuate as much as I hoped. ABV worked out perfectly for schedule...right between Fullers ESB cask and bottle...5.7-5.8%.
I did the aroma/whirlpool hops in a hop sock and squeezed it. Out of the fermenter it looked and smelled amazing. No gelatin necessary...super duper clear. |

Notes: - First dry hop charge at high krauzen (three days from day 1 to day 4).
- Second dry hop charge near the end of fermentation, but while fermentation is still active (7 days from day 7 to day 14).
S-04 is good, but if you can get VOSS Kveik, it is highly recommend.
If you do use the VOSS, ferment around 28-29C. You will dry hop 24 hours after pitch, and again 48 hours after pitch, VOSS works super fast.
It is suggested to reverse Chloride to Sulfate ratio, chlorides around 100, and sulfates around 50 will add to the haze you are looking for in a NEIPA. |

Notes: 1.75 L starter made w/ 3 vials whitelabs munich helles 860.
Actual OG 1.051
Cooled w/ wort chiller to 65, racked to carboy and chilled further in chest freezer to 45 (achieved 7 hours later). Aerated and pitched the decanted (chilled) starter. Let temp slowly rise. Krausen activity 24-30 hours later @ 48 degrees. Hit 50 degrees about 36 hours after pitching. Hold at 50.
Down to 1.023 on day 5. Bumped temp up a degree.
Day 6 bumped temp to 53.
1.016 on day 8 and bumped up to 60. sample tasted good. No diacetyl as far as I can tell. Still planning to keep it at 60 for a couple days before lagering, just to be safe.
Transferred to secondary and dropped temp a couple degrees a day until it hit 34. Kept it there 4 weeks, then bottled w/ corn sugar and a bit of washed yeast (probably not necessary).
06/13/14 (4 weeks in bottle) - The beer lacks the maltiness that I was expecting from a munich helles. It's actually pretty fruity, especially in a side by side comparison w/ Andechs Vollbier Hell. Not sure why. Maybe I didn't aerate it well enough, or perhaps I didn't lager it long enough. I enjoy drinking it, but it definitely has a more American flavor profile than I was hoping for. I thought the sample at bottling time was more malty, but can't be certain. KEEP BETTER NOTES!!! |
