Notes: 1) Treated water and heated strike water to 160. Hit 154 which was over my 152 target. Rode out the 154 and it stayed around that and 153 for the hour. Mashed out to 170 holding the bag off the bottom.
Ph: 5.5
2) Uneventful boil, hopped as planned. Cooled using wort chiller and overshot 150F as it cooled very quickly. Not worried about the lower temps for the whirlpool, but lower than I wanted at ~125. 30 min whirlpool then continued cooling to lowest I could at 80.
OG: 1.062-4 <- hard to tell on the hydrometer but basically right on
3) Transferred to primary and moved to temp controlled chamber to chill to 68. Aerated using a pump and diffusion stone for 30 then pitched ballooned activated wyeast smackpack.
4) Fermentation going very well 12 hours in. After 4 days from pitch I dry hopped stage 1 and pulled a gravity sample. Gravity was at target.
5) Continued fermenting until 8 days from pitch and pulled another sample that read 1.012, so it hit below target. Sanple tasted fantastic!
6) Began cold crash and kegged at 10 days from pitch, adding the second dry hop to the keg in a hop screen. Carb'd at 2.2 vols for a week.
Taste is incredible with very milky smooth mouthfeel. Low bitterness and very aromatic and tasty. Highly recommend this recipe. The ella and Vic are subtle in the taste and the ekuanot blasts through with strong aroma. My best beer yet. |

STARTER:
- Shaken Not Stirred Starter (100g in 1qt liquid in 1 gallon jar) prepared the night before brewing, slowly aerate with pure oxygen, then add yeast and shake a little more.
BOIL:
- Add sugar at 15 minutes left in boil
- nE=4, T1=90, T2=60, T3=30, T4=10
FERENTATION:
- Open ferment (cover loosely with sanitized foil) initially, add airlock just after high Kreusen
- Ferment at 68 for two days, unplug freezer, ramp to 72 over four days, hold at 72 for 24 days (30 days total fermentation)

PACKAGING:
- Target 2.6 volumes of CO2 (ensure fermentation is complete to reduce risk of bottle bombs)

Notes: Immerse the oak cubes in a bourbon of your choice and set aside while the beer is in primary. When primary is finished, put the cubes in your secondary vessel and rack on top. Let sit for at least a month, and then sample every few weeks until the oak flavor is to your liking. Now prepare the vanilla beans.
Cut the vanilla beans into one-inch long pieces and cut in half lengthwise. Scrape out the gunk inside and discard. Soak the beans in bourbon for a day or so to sanitize. Add to the secondary and let sit for two weeks, then bottle or keg.
This beer really benefits from long-term bottle-conditioning. Immediate tastings were positive, but six-month old bottles were outstanding. Time really allows the flavors to meld with the vanilla. |

Notes: I created a culture of bugs from the dregs of bottles of Jolly Pumpkin Calabaza Blanca, Jolly Pumpkin La Roja, and Lindemans Framboise Lambic prior to racking by a solution of 2 cups water to one half cup DME. The scent was acidic with a small pellicle growing atop.
The day prior, I boiled peaches, then pureed them using my ninja blender. I then placed them in the refrigerator in sanitized jars.
Rack onto peaches and toasted french oak chips as you approach FG. Add your yeast culture. Swirl carboy contents and let sit for 6 months.
**UPDATE - 8/ 15 /15 Tasted Approximately 2 months after adding peaches. The peach flavor is null, however, the sour is present. Next time I will use apricot as I hear it is better used for that stone fruit flavor. At this point in time, the beer is very well balanced and tasty with mild sourness. I hope the sour will grow. Beer is a nice orangey / brown color.
11/23/15 - Bottled. FG of 1.004. Damn, this is amazing. I believe this beer is about 7%abv |

A multiple gold medal winner at the Colorado State Fair, this decadent vanilla porter
is sure to raise eyebrows. Most vanilla beer
recipes use one or two vanilla beans; this
one uses five and has the base recipe to
back them up. A rich, smooth porter with
hints of rum and molasses behind a coffee-
like roasted character, then infused with
fragarant vanilla. The beans used in this kit
are 100% Madagascar bourbon beans that provide deep, sweet flavor. The final pint emanates a heady vanilla perfume and makes for both a wonderful after-dinner drink or the ultimate ice cream float.
