Notes: Mashed for 60 min (difficult on the stove to maintain temp) approx 155 deg was my goal. Started with 1 qt water for 1 lb total grain. added quite a bit to cool temp down since the 10 deg rule over ideal temp wasn't getting me down quick enough.
Mash out at 170 deg for 10 min (includes raising temp time). Sparged with 170 deg water and added water to get about 2.75 gal of wort. Brought to boil (about 45 minutes). Added DME just before boil and brought up to boil. Added hops as scheduled. Opted to add Willamette at the last minute to give more complex bitterness. Added the candy with 10 minutes to go. OG was 1.080 (adjusted the final batch size), as expected. Pitched the yeast a little high but was having trouble getting to low-60s (66). COncern with the yeast was that in transport my car got pretty warm and don't know if it will work. NO movement after 30 hours. Bubbled fine and transferred after 9 days. FG was closer to 1.016. Tasted sweet with some complexity. Not hoppy at all. Turned out fantastic. The longer I wait the better it gets. |

DIRECTIONS
Mill the grains and mash at 151°F (66°C) for 75 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 60 minutes, adding hops according to the schedule. After the boil, chill below 50°F (10°C) if possible, preferably to 45°F (7°C), cooling the wort overnight if necessary. Aerate the wort thoroughly and pitch the yeast. Ferment between 45–50°F (7–10°C) for up to 5 days, then slowly raise the temperature over the next 10–14 days to 60°F (16°C). When fermentation is complete, allow the beer to further condition at room temperature for another 14 days, then crash to 35°F (2°C), package, and carbonate to about 2.25 volumes of CO2.

Single-malt variation: I recently brewed a version of this where I replaced the grist with 100 percent Munich from a local craft maltster, with great results. Could be worth a try! |

DIRECTIONS
Mash at 148°F (64°C) for 90 minutes, then sparge and boil for 90 minutes, following the hops schedule and adding the candi syrup at the start of the boil. Chill to 68°F (20°C). According to the website, Vicaris Tripel is fermented at 75°F (24°C) and lagered at 34°F (1°C), so pitch the yeast, and after 48 hours, raise the temperature to 75°F (24°C) and ferment to completion. Lager near freezing for at least one month before bottle conditioning.

Notes: Boil the milled spelt separately with 1 - 1.5 litres until it becomes creamy. Add to the strike water before the other grains.
Start fermentation at 18°C and let it free rise. Keep ambient temp at 20°C and just use a foil lid for the fermenter until fermentation slows, then add the airlock.
