Notes: Yeast Starter:
1 packet of 1388, starting yeast count = 92 Billion Cells
stir plate using Braukaiser meethod
stage 1 - 1.3L water with 134g DME = 279 Billion Cells
stage 2 - 1.3L water with 134g DME = 403 Billion Cells
pitch yeast at 17 deg.C and increase to 27 over 5 days.
leave in primary for additional week at 27 deg.C.
Adde 0.97kg invert sugar to primary @ high krausen (30 hours after pitching yeast)
Rack off to secondary 10days. Gravity after 16 days still at 1.021. Added 300g sugar boiled for 20min with 0.3g of citric acid and 200ml of water to get it re-started. Fermentation started up again but remained at 1.021 after a few days.
Cold conditioned for 3 weeks at 0.5degC. SG at bottling = 1.020... higher that intended but it will have to do...
Bottle at CO2 level of 3.0 (200g dextrose).
SG measured from bottle after 1 month... 1.018...

| Notes: I wet the grains before milling, worked very well! Recirculated the mash continually, herms sys. Finally trusted the sys and just let it work for a 90 min mash. My water has high ph, 8.1, so I added 2 gals of reverse osmosis water, the mash ph was 4.6. Hope it makes a diff? Did a 90 min boil, added yeast nutrients at 15 along with irish moss and clairitan. |

Notes: 4/11/2021: OG: 23.2B (1.090) , higher amount of yield than I was originally planning thus the lower OG, overall a good brew day
4/16: 10B, 1.004, 11.93%, will let sit for another week for floculation
4/22: Kegged, burst carbed @ 2.5 Bar for ~24 hours, serving at ~0.8 Bar. Ended up with ~22L, 20.5L in a keg, and 1.5 in a bottle which I will bottle condition with some brown sugar and leave to sit for a while.
4/23: Tasting notes: Nice fruity notes on the front, a bit of alcoholic heat in the middle, with a long aftertaste of dark fruit and smokiness (from the brown sugar maybe?). All in all, a resounding success! |

CONVERSELY ... the higher chloride batch (95ppm / Sulfate = 66ppm) gives more malt character and less hop sharpness. This has become less mini IPA and more true summer sipper. Crystal clear in a week too. I think I prefer this version. Maybe it was the 1.006 finish? Might even up the sugar from 13% to 18% for a tiny little extra dry finish. Overall ... A-
75% is bang on for brewhouse eff w/ no sparge
7-9 degrees hotter in F strike to hit mash temp
V20. Moderate sulfates, nice mosaic pop, DROPPING boil kettle hops is absolutely the way. |
