Add sugar near end of the boil - perhaps at 10 minutes.
Mashed for 90 min at 149.
added 4.5 gal water @ 168. Mashing for 20 min to allow bed to settle.

OG: 1.083 <-- not sure if temperature corrected (could actually be 1.086)
5/31/15 8:17 | Chest Freezer temperature is 62F. Turned up.
6/3/15 16:00 | Freezer temp was 77. Removed from freezer and placed in garage.
6/3/15 17:40 | SG 1.011 Still has some krausen. Bubbles at 1 minute.
6/7/15 10:15 | SG 1.10. Lot of floating material . Kind of watery but still drinkable. Transferred to secondary because I found a crack in the glass carboy which I was going to use for the next brew. So instead I put the carboy in tub and racked this ale into it, and dumped bunch of trub. Having a weiss beer in prod in the ale pale will reduce my desire to keep fucking around with this golden ale.

6/12/15 8:30 | Added remaining 0.25 ounces of Hallertau. Removed space heater.
6/13/15 3:00 | Sampled: SG 1.0025 Temp Corrected (per brewers friend) (ABV 10.6%)
6/13/15 ?? | Placed into chest freezer for cold crash
6/14/15 | Bottled 3 - 3.5 gallons into 20 flips tops and a handful of thinner bottles at 4 volumes. SG with priming sugar 1.10
6/15/15 9:00 | still in chest freezer at 40F
6/15/15 09:00 | moved into house to make room for hefewesien in freezer.
6/17/15 10:15 | The couple gallons remaining in carboy is still bubbling a bit but that could be formerly dissolved CO2 from cold crashing. Nonetheless, is good sign that O2 has probably been pushed out.
6/18/15 | bottled remaining beer into 6 thick bottles at 4 volumes. FG: 1.004

Notes: # New English IPA II
This is an English IPA using "new" British hops that have a fruity character usually associated with American or Australian/ New Zealand hops. These hops are a little harder to find but are priced at a similar price point to the usual fruity hops. Grain bill is simple, it’s all about showing off the hops with this one.
## Brewing Notes
Availability of hops:
* Olicana is now available from most homebrew shops in UK.
* CF182 Opus is an experimental Charles Faram hop available in small batches from The Malt Miller, UK.
Hop Aid (anti fermentation foam) needed as London III always produces a lot of foam. Ferment at 18C until 5 points off FG and raise 1C per day until 22C. Cold crash when finished to 1C and add dry hop in hop canisters for 2 days before closed transfer to keg. Carbonation 12psi, 12C for 12 days (can drink after 7).
## Appearance and Tasting Notes
Aroma is of green typical hop aroma with caramel. The EBC 150 crystal does give the beer a light brown/dark yellow appearance and gives a caramel flavour to the beer. Not much Olicana flavour or aroma but Opus (CF182) gives a dull orange flavour to beer, like marmalade. The caramel from the malt and orange from the hops do blend well. Dextrin malt helps with head retention leaving tracings of foam on the glass as you drink. The beer is slightly hazy as no extra finings were used. Bitterness is a bit too rounded for English IPA
## Overall
Another addition to the New English IPA series, this one using Olicana and CF182 (Opus). Will give Olicana another chance as mostly flavours are lost or drowned by Opus hops. Olicana shouldn't be used to bitter IPAs, is too soft and rounded as a bittering hop, substitute with Target maybe. Opus would be best used in dark beer, either dark mild or porter to give orange flavour. Not a bad beer but not as good as the first in the series. |
