Will be split between 2 primaries, one fermented with wyeast 3864, and the other with WLP 550.
- at the end of sparging that not exceeding 168–170 °F (76–77 °C) is the most important. if its lower, not the biggest deal, potential loss of probably .2 to .4 ABV absolute max using room temp water in a light sparge.
Fermented from 19-24 C on a rising temperature curve peaking around 80% attenuation. In Primaries for 22 days, then dryhopped in secondaries for 5 days.
EDIT: This beer was made as a blind clone of "It is not the end of the world" by Unibroue. Blind because we live far away and couldn't get the beer so I put this clone recipe together after looking at some Fin du Monde clones to approximate the malt base, and getting the basic stats from Unibroue's website in regards to IBU/SRM/ABV/hop varieties. After trying and failing to acquire some of the commercial version for over a year, we managed to find some so we could do a side-by-side tasting with our homebrew within a month of finishing carbonation in the bottles. The homebrew easily won, though not by a huge margin, they are quite similar with the biggest difference being carbonation, then the hop aroma/flavour levels. This clone is not overcarbonated like the commercial version, and has better hop flavour/aroma that still does not disturb the balance in our opinion. |

Using Wyeast 1318 instead of Whitelabs WLP067
Added 650 grams of acidulated malt to drop the PH to 5.2
Tweaked the water chemistry a little too - dropped the Baking Soda - 2:1 Calcium Chloride to Calcium Sulphate ratio
Use Epsom Salt, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.

Russian Doll was an experimental set of brews showcasing the effects of varying the amount and ratio of malts in the grist. The barley wine had rich, chewy dark fruit aromas balanced with a spike of zesty hops. Toffee, apricot jam and grapefruit pith, crammed into the head of our little Russian Doll family. Age the beer in bottle for a few months at cellar temperature to allow the hot alcohol characteristic to diminish.

Fruit Addition (Fruit add 0.002 OG and 0.25 ABV%):
Split into two 5-gallon batches:
For one batch, add 4 kg of pasteurized raspberry-rhubarb purée at high krausen.
For the other batch, add of unfrozen whole blueberries (1 kg) and black currants (1 kg) at high krausen.
Fermentation: Allow the beer to ferment for an additional 1-2 weeks after adding the fruits.
Lactose Addition: Add 0.5 to 1 pound (227 to 454 grams) of lactose during the boil to back-sweeten the beer.
