Notes: Huge pineapple and ripe mango notes, densely saturated pure Simcoe flavor, almost no bitterness. Body is full, soft and rounded. It's just a touch dry for the style from overattenuating. Wanted this to finish a little higher and missed starting OG by a few points.
Changes for future brew:
- Add a touch of honey malt or GP in place of 2-row for more orange-ish color
- Mash higher
- Add mashout step
- Increase Liquor to grist ratio
- Try London Ale III
- Add a very small bittering charge or FWH |

Notes: # The Haka
Brew club challenge was to make a beer using 100g of Rakau and no other hop apart from first addition bittering hop. No other restrictions on malt bill or style. As Rakau are New Zealand hops, I chose to do a Black IPA in reference to the New Zealand rugby team which are known as the all blacks. They have a famous pre-match tribal dance known as the Haka (Ka Mate Haka) and hence the name of the beer.
##Malt
The mash was started with Golden Promise and flaked barley for one hour. Other dark grains added at end of mash: chocolate wheat, roasted rye and de-husked roasted barley. All of these dark malts are known less harsh than standard dark malts. The rye should add a little spiciness to the beer. I wanted it to be as dark as possible while still allowing the hops to be the main event to terms of taste.
##Hops
Magnum was used to bitter. I wanted it to be bitter as it's an IPA but not to be too assertive. 40g Rakau were added at whirlpool while 60g were added as dry hop.
##Yeast
Fermented with US05 for a dry crisp finish at 22C under 10psi with fewer esters. As this was a 6.5% beer more than one pack was required (I only had one pack), I did 24h 1L starter. Fermented at 22C as I didn't have much time left after receiving the hops! |

Notes: Son of a Bastard
I love the Bastard series of stouts from Nickelbrook in Hamilton, Ontario, so this is my tribute to it. However, I've never quite fallen in love with this recipe. I need to make it creamier-feeling. Do I need to become nitro-capable?
Malt
Basic idea here is a healthy helping of dark/black malts and dark crystal malts. Feel free to vary the actual specific malts.
It's a lot of malt! Do not overgrind the malt. I had a seriously stuck mash for STOUT03. Also, make sure the mash filter is properly clamped on. Don't fuck around!
I've set brewhouse efficiency to 55% for this recipe. That reflects results to date. It's still quite possible that the yield will be lower than expected. Have on hand at least a kilo each of DME and dextrose.
Mash
The mash pH that is calculated for this recipe is way too low. Ignore it! Stout03 came in consistently at 5.5. Eventually it dropped to 5.2. Don't leave out the acid malt!
Dough in 33L @ 168F ==> 153F strike temperature //set to 2.5L/Kg grist ratio to avoid troubles with overly thick mash Stout03
Add 10L to HLT after dough-in and fit HERMS
Let sit 60-90 minutes at 153F (with a gently drop over time)
Use HERMS to raise temp to 158F, hold 10 minutes
Use HERMS to raise temp to 170F and start to run off
Be gentle with the HERMS recirc to avoid a stuck mash
Consider using rice hulls for same reason.
Chocolate
Use cacao nibs roasted according to this schedule:
- 350 °F (177 °C) for 10 minutes
- 325 °F (163 °C) for 5 minutes
- 300 °F (150 °C) for 5 minutes
- 275 °F (135 °C) for 5-10 minutes or until done.
When the roasting is right, there will an aroma of brownies. You could go longer too for deeper more complex flavors. I did not do that with STOUT02.
Cacao nibs are added to the mash.
Yeast
I'm going to go with SAFALE S-04, my new favorite. No need to rehydrate it. Sprinkle two packs on the wort and stand back.
Hops
Not a lot of hops. Most straight-up stout recipes use a bunch more, but I want little noticeable hop flavor, so the chocolate and coffee flavors can shine.
- 240 alpha pts 60 minutes
- 75 alpha pts 30 minutes
- 75 alpha pts 0 minutes (stay close to 1/2 ounce)
Coffee
Prepare cold-brew coffee at a rate of 60g coarse coffee per cup. (Make at least 6 cups. You won't need that much, but anything left over makes nice iced coffee.)
Default rate is STOUT 4 (equivalent) 3/8 cup to a glass carboy. Go with that or perform taste tests with the cold brew coffee.

- on step #2 & #3: resting the mash at this temperature has been show to improve the yield, regardless of the malts used. Varying the times spent at the 60 and 70°C rests allows you to adjust the fermentable sugar profiles. For example, a 20 minute rest at 60°C, combined with a 40 minute rest at 70°C produces a sweet, heavy, dextrinous beer; while switching the times at those temperatures would produce a drier, lighter bodied, more alcoholic beer from the same grain bill.

continuous sparge:
- The wort is re-circulated and drained until about an inch of wort remains above the grain bed. The sparge water is gently added, as necessary, to keep the fluid at least at that level. The goal is to gradually replace the wort with the water, stopping the sparge when the gravity is 1.008 or when enough wort has been collected, whichever comes first.
