Notes: Combine cider and yeast, aerate, ferment at 65° F to 70° F (18-21° C) for 7-10 days, rack to secondary fermenter, and add pectic enzyme. Condition/clear in secondary fermenter for 4-6 weeks. Bottle condition with 6.25 ounces (175 g) corn sugar or force carbonate to 3.0-3.5 volumes CO2. Cellar for at least six months before serving.
Note: The final alcohol by volume (ABV) will vary depending on the original gravity of the yeast.
Specialty option (8-10% abv):
Add 1 lb (454 g) adjunct(s) (brown sugar, molasses, honey, dark corn syrup or sorghum) during fermentation. Add any desired spices in teaspoon increments while in secondary fermenter. Rack to tertiary fermenter for conditioning/clearing and bottle.
Karol's Krapple option:
Add 2 lbs (907 g) cranberries for a two-week secondary fermentation. Rack to tertiary fermenter for conditioning/clearing and bottle.
New England Style option (11% abv):
Add 2.5 lb (1.13 kg) brown sugar and 1 lb (454 g) molasses during fermentation. Add 1.6 lb (680 g) raisins, 2 tsp Saigon cinnamon, 1 tsp fresh ground nutmeg and agefor two weeks. Rack to tertiary fermenter for conditioning/clearing. Bottle condition with 3.5 oz (100 g) corn sugar (with half-pack Safale US-05 yeast) or force carbonate to 2.0-2.5 volumes CO2. Cellar for at least one year before serving. |

Version 1) Very Good.
- 2 vials of WLP051
- pitched at 1.0 pitching rate (need 2 vials into 2L starter)
- used 1lb DME to get to 22 brix (adjusted efficiency down on software to read 22). Next time do a double mash (listen to brew strong blichmann #1 show January 2016)
- Primary- 20-30 seconds of oxygen 9 hours after pitch. .5 oz steamed medium toast hungarian oak cubes plus juice... 30 seconds of O2 8-12 hours after pitching. Ferment at 67 raise 1 degree per day starting day 7 up to 72. Airlock activity stopped at day 11, rested for 1.5 days. Read 1.025 FG (9.2% on calculator)
- Secondary on 2 oz steamed medium toast hungarian oak cubes plus juice for 8 days at 65F. Minimal Oak character (although present).
-6 beers left, added another 1 oz in keg for two weeks (in fridge). Entered WoodAged this in (sunshine) and big wood (FCC)
-Score sheets for non wood aged enries (imperial stout) said it needed to bigger with more body. - won bronze at FCC.. Mentioned adding a little more roasted grains so I bumped it from 1.5 to 1.7. This is a really good beer |

I suspect that fermentation will take about two weeks before it can be racked to secondary and the oak chips added.
Make a yeast culture from the bottom of the primary fermenter for your next brew.
No sparge. Add enough water to bring the pre boil volume up to 7 gallons, should be about 2.5 gallons.
Make a lighter batch of ale from the remaining grain and some more DME. |

Ingredients
4.5 lb. (2.0 kg) flaked wheat (1 °L)
4.9 lb. (2.2 kg) Pilsner malt (1.6 °L)
1.1 lb. (0.5 kg) flaked oats (1 °L)
0.25 lb. (113 g) Munich malt (8 °L)
0.5 lb. (227 g) rice hulls or other natural filter
4 AAU Hallertau hops (60 mins) (1.0 oz/28 g of 4% alpha acids)
1.5 oz. (43 g) fresh citrus zest (5 mins)
0.4 oz. (11 g) crushed coriander seed (5 mins)
0.03 oz. (1 g) dried chamomile flowers (5 mins)
Wyeast 3944 (Belgian Witbier), White Labs WLP400 (Belgian Wit Ale) or Brewferm Blanche dried yeast
Step by Step
Mill the grains (including the flaked grains, but excluding the rice hulls). Mix the rice hulls into the grain post milling and dough-in targeting a mash of around 1.5 quarts of water to one pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 122 °F (50 °C). Hold the mash at 122 °F (50 °C) for 15 minutes then raise the temperature over the next 15 minutes to 154 °F (68 °C). Hold until conversion is complete, about 60 to 90 minutes. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.039 (9.7 °P).
The total wort boil time is 90 minutes, which helps reduce the SMM present in the lightly-kilned Pilsner malt and results in less DMS in the beer. Add the bittering hops with 60 minutes remaining and the spices with five minutes left in the boil. Do not bother with Irish moss or other kettle finings. Chill the wort rapidly to 68 °F (20 °C), let the break material settle, rack to the fermenter and aerate thoroughly.
Pitch ten grams of properly rehydrated dry yeast or use two liquid yeast packages. Alternatively make a 2 qt. (2 L) starter using one package of liquid yeast. Begin fermentation at 68 °F (20 °C) slowly raising temperature to 72 °F (22 °C) by the last one-third of fermentation. When finished, carbonate the beer to approximately 2.5 to 3 volumes of CO2. |
