Notes: Fermentation temperature is no crucial for the beer. We try to shoot for about 60 F but the provided yeast strain is very forgiving to both higher and lower temperatures. A typical fermentation will be complete in about a week but can take longer with lower temperatures. Coffee should be added to fermenter(or conditioning vessel) no more than 24 hrs before kegging or bottling, ideally at a temperature below 40F. Longer exposure to the beans can result in vegetal flavors in the beer. |

If fermentation is complete, cold crash and package, or hold at 64 F until complete. Store as cold as possible for at least a week, preferable a month. Notes: Aroma: Malty, slightly sweet, with chocolate, toasty, spicy qualities. Balanced spicy, floral with reminiscent lemony, citrus hop aroma. Low ester fruitiness.
Appearance: Light to Medium Brown (Nothern English Brown.) Clear with off white head.
Flavor: Caramel, Chocolate with slight spicy, toasty malt balanced with medium bitterness. The hops will be moderately present with floral, citrus character. Medium finish delivers both malt and hop flavors. Low esteric fruitiness.
Mouthfeel: Medium bodied with slight resinous impression. Moderately high carbonation. Low alcohol warmth.
Overall Impression: Quaffable, flavorful hoppy brown beer that will appease the hop headed and malt minded alike. Opens the fall season with a beer light enough to session, yet bodied enough to have character. This beer may be for gulping, but the depth of flavor is worthy of sipping.
**History: An American style from the modern craft beer era.Derived from English Brown Ales, but with more hops. Pete’s Wicked Ale was one of the first and best known examples, and inspired many imitations.
**Characteristic Ingredients: Well-modified pale malt, plus crystal and darker malts (typically chocolate). American hops are typical, but continental or New World hops can also be used.

Notes: - Heat 1.5QT to 170F, add grains. Soak for 20min; Grain temp should be 155F.
- Rinse with 2QT at 170F.
- Add to brew kettle, bring 4 gallons to boiling; add Fermcap now, if desired.
- Shut off heat, add 6# (half gallon) of Pilsner Malt Extract to achieve 4.5 gallons, return to boil.
- Add boiling hops per the timing schedule.
- Add Irish Moss, Fermax with the 5-min boil addition, if desired.
- Add "whirlpool" hops after flameout when the boil has ceased and the temp has dropped a few degrees. Leave COVERED for 15 minutes before initiating the ice/cooling bath.
- Transfer to carboy when temp is under 70F. Add water to achieve total volume.
- Pitch yeast + Clarity Ferm (if making reduced-gluten beer). Ferment at ~66F.
- Add Dry Hop Mosaic + 2 weeks with Bottle/Keg. |
