Notes: Soak nibs in vodka, freeze, scrap fat off. Pour liquid and nibs into secondary. I am adding 1 vanilla bean to this mixture to bring out chocolate flavor. I am debating cutting LME by 3-6lbs. I want this more of a easy to drink enjoyable chocolatey beer. No too much bitterness or alcohol twang. |

Notes: Really poor efficiency, probably because wheat malt didn't get broken up enough. Resulted in very hoppy pale ale. Won't use Centennial as a dry hop in such a light malt beer again - likely go with something with a brighter citrus character.
Turned out to be a pretty good beer, but will not brew again without a dry hop change. |
