Notes: To make it clear, raw ale -> No boil :)
Sanitize juniper branches by dipping into boiling water. Also sanitize other equipment that might bring contamination (you're supposed to sanitize everything but I don't think I'll sanitize everything).
Cover bottom of the mash tun with juniper branches and do the mashing. Meanwhile, take 5-10% of the wort and boil the hops separately. Add the hopped wort back (obviously filtered) while sparging.
Pitch the yeast when wort is cooler than 40C and bottle after 2 days :)

Notes: Fining:
The most common use rate for gelatin is 1g of gelatin for each 3.8L of beer. 6g per 23L
Dissolve the gelatin in 60ml of water per gram of gelatin. Using this rate it takes 5 grams of gelatin dissolved in 300ml of water to dose a 25L batch of homebrew.
To dissolve and rehydrate the gelatin powder sprinkle it onto the cool water and give it a gentle initial mix then allow it to rest for 15-30 minutes depending on how patient you are.
After allowing it to “bloom”, stir the mixture together until you don’t see any more solids.
Heat the solution on the stove top or in the microwave until it is at least 70C. If using a microwave heat slowly in bursts and check temperature.
Pour the mixture into the already cold fermenter (<10C minimum, <2C even better) and agitate if possible to disperse the mixture a little better in the beer.
Let the fermenter rest cold for 2-3 days or longer then rack to bottles or a keg. |

Notes: Inspiration for this Pale Ale recipe came from a buddy who grows his own hops. He gave me a bunch of Cascade hops so I thought I would try and make a Pale Ale using just those hops.
Brew day Notes:
-Steeped Grains at 155* for 45 minutes
-Added enough water to the wort (after boil) to get to 2.75 gallons. Shook very well in 5 gallon carboy and poured wort into 3, 1 gallon glass carboys. Split 1 package of Safale US-05 into 3 piles and poured one into each carboy.
10 Days after brew day:
-Dry hopped with .75 oz of Cascade whole leaf hops. Added .25oz of Cascade whole leaf hops to each (3 total) 1 gallon glass carboys. |
