Notes: The clone attempt came out great, great balance of hop and malt. I took the listed ingredients on the bottle, and made an IPA out of those parts. I most likely didn't get their hop schedule correct, due to the huge difference in hop profile. Next attempt may include dry hopping rather than just using in boil or @ flame out.
Comparing to Black Raven's version: I received comments saying they preferred mine over the real Tricksters, giving attributes of a less bitter profile, less harsh and more crisp. |

Saaz to add Thiols (fruity flavors)
Saaz for bittering hops at 60min Boil.
Equal parts Nectaron, Waimea and Rakau for Whirlpool, High Krausen Dry Hop and Late Fermentation Dry Hop to ensure balanced flavor profile.
Target Pre-Boil:
pH - 5.35
Gravity - 1.059
Volume - 28 quarts
Target post-Boil:
pH - 5.30
Gravity - 1.072
Volume - 23 quarts
After boil, cool wort to 70 deg before pitching yeast.
Ferment 7 days @ 68 F
Day 1 - 2: Set spunding valve at 0-2 psi
Day 3 - 6: Add High Krausen dry hops. Set spunding valve to 10 psi.
Day 7: Soft crash to 60 deg or less.
Day 8: Add double dry hops and ascorbic and metabisulphite to second fermenter. Purge with CO2. Rack wort to secondary fermenter.
Day 9 - 12: Dry hop @ 50-60 F at 10-15 psi
Day 13: Cold crash @ 35 F and closed transfer to serving keg.
Day 14 - 16: Diacetyl / hop burn rest. Pressurize and shake for 2 mins @ 30 psi. Set CO2 regulator @ 8-10psi.
Day 17: Enjoy

Notes: Lower steep/mash temp (148-150) should get you a lower dryer gravity
Add belgian candi syrup before the boil, taking kettle off heat. Another clone i read used D-180.
Add DME just before boil to avoid boil over.
Yeast Temps: Style suggests starting an abbey yeast at 64f up to 68f for 48hrs to minimize fusels. At 1/3 sugar break move it to 74-78f. The yeasts could increase to these temps on its own also. This is something I will attempt by moving out of my basement to warmer rooms at about 1.046 gravity or sooner. Update: Mine took about 4 days to hit 1/3 then I moved it to a 70f room.
Wyeast 1762 is supposed to be the Rochefort Yeast. White Labs WLP540 is also Rochefort. Other alternatives; Wyeast 3787 or 1214
Mount Hood is an Alternate for Hersbrucker hops with a higher AA. Reduce by about half. From .5oz to .2 oz. You could instead remove the 60min Styrian. This would keep the IBUs from overpowering the style.
Take note of higher priming sugar. Style suggests higher volume. 2.5-3 vols
Bottle condition recommendations are longer. Minimum 6 weeks, but better at 2 months.
Update: Fermentation smells like banana about 7 days in and after I had moved it to a 72f room.
Update!: This recipe works! It taste near close to a proper Trappist Rochefort. After 6 weeks aged I smell banana, its strong but sweet covers it up, its a perfect dry. Letting it age took the edge off. |

| Notes: This beer has been a huge hit with friends. The Devils Club and Spruce tip blend perfectly with the hops for an herby and earthy IPA. Very unique. Devils Club is a very therapeutic substance of the Ginko family. It has been used traditionally as a cure-all for thousands of years. It is also known to produce hallucinations when consumed in very high concentrations. I find the devil's club produces a particularly giggly and giddy kind of intoxication, similar to red wine or tequila. Note that Devils club berries are poisonous. Only the bark/roots are safe for consumption. Like any plant/herb, some people are known to have allergic reactions to Devil's Club, so it is advised to be cautious if you've never had it before. |

Notes: En tablett Protafloc når 15 minutter av koketid gjenstår.
At flameout, cool down to 70 degrees C. STOP the cooling, add Amarillo, Cascade, Citra and Mount hood. Stir in circles or run whirpool, leave for 20 min. Then continue until you reach 29 degrees C.
Mix 2 x Nottingham, 2 x US-05 dry yeast; Hydrate as adviced on package, and pitch the started yeast to the worth (WLP007 is an excellent alternative if you are into liquid yeast). Ferment at 20 degrees C for 14 days.
Carbonate with 6 g/L white sugar.
Store for 21 days before enjoying.
This is a fresh, hoppy IPA with notes of citrus, grapefruit, tropical fruits and berries: And it combines with an excellent body, with hints of malty biscuit :D
