Notes: Based on the Dead Ringer (Northern Brewer) clone kit for Bell's Brewing "2 Hearted Ale". Utilizing Chinook hops in SMASH recipe to isolate flavor/aroma. 40L Briess Caramel in steep w/ 11 grams of Briess Carapils to increase foam/head retention and mouth feel. Hops are generic Chinook from Northern Brewer w/ AA on label.
Missed OG @ 1.059 and finished @ 1.014 (6.17% abv). 2 kegs (1 gal/ea.) and 5 six's (12 oz. @ 30/ea).
Tasting good, moderate hops w/ malt flavor. Favorable eval @ TVHB meeting. |

Notes: Add 1/4 of the nutrient mix on brew day, on day 2, day 4, and day 8. Keep fermentation temperature between 64 and 68 degrees. Rack to secondary fermenter after a month. After first month, temperature control not as critical. Mead should be finished in 3-4 months. Carrot Blossom mead normally needs mead acid blend--add it to taste before bottling or kegging. Carrot Blossom honey is full of caramel like complex sugars that linger into the mead.
Mashing Instructions:
Heat honey jar in hot water so it will pour easily. Bring 1/2 gal. high alkaline water to boil and turn off stove. Slowly add the honey to the water stirring constantly. Honey-water mixture should be around 130 degrees. Cover and let it sit for 20 minutes. After 20 minutes, put covered pan in tub of cold water for half-hour. Add 1 gallon cold water to carboy. Pour honey-water mixture on top of the cold water. Add more water until you get to 1.120 OG. |

Of course, add your whirlfloc and yeast nutrient. (This isn't an overly thick beer, we'd want to dry this out as much as possible.)
Nice starter of White Labs WLP530 Abbey Ale, or pitch at least two vials, and aerate the crap out of it. Hit it with O2 if you have a tank/diffusion stone.
Give it about 3 weeks in primary, keeping it above 70 degrees for the yeasties to do their thing. Rack when it hits 1.012.
Here's where I get fuzzy. Vinnie says that when this comes off to secondary, he removes the yeast. I'm assuming he's doing that by pasteurization? Either way, I doubt it'd ruin the beer if it's just racked as you normally would.
You'll need a bigger carboy than 5 gallons, to accommodate the cherries, so grab yourself a 6.5 gallon one.
Into secondary, dump a package of Brett, and give it another couple of weeks.
Into secondary, dump 2.0 lb mashed cherries, as well as a package of Belgian Sour Mix 1. For a full effect, soak 1oz of oak chips in some pinot, and add those to the secondary as well. Let that chill for 2-3 months.
Rack to a keg, stash for 6 months before carbing.
Hugely labour intensive beer, and man, if I tapped that keg after a year or so and it tasted like arse, I wouldn't be a happy bunny! |

| Notes: Brewed 4/26/15. Strike water was about 170/171F. Hit about 153F on the dough in and I recirculated about 1.5 gal to get it down to 152F. pH was 5.1 which is way lower than the predicted 5.5 in brew'n water. Not sure why that might be but the acid malt probably wasn't that necessary. Kettle efficiency is 81% which is a little lower than normal. Boil was pretty vigerous and I ended up with probably about 5.5gals in the fermenter. Could have slowed it or collected about 8.5gals in the kettle. Topped off with a little bit of water. Efficiency was pretty good and within normal range. Pitching temp was a little high about 71F so I pitched and cooled it down to 67F. 4/27 beer has been sitting at 67F with icing throughout the day. 4/28 temp has been about 67/68 all day. 4/29 temp had drifted up to about 69F so I let it stay there. Dry Hopped 5/8/15. Kegged 5/17/14. Ended up dry hopping for a bit longer than the planned 7 days. |

Notes: This has been my go to ale recipe for years. It is light, flavorful, and loved by everyone who pulls a pint. You could dry it out a bit by adding a pound of suar or maze in the boil, but it stands well on its own.I brew it at least once a month. I never shared it until now as a friend of mine entered it into a local comp and won 1st overall.
Add a little gypsum to get mash ph to 5.5
