Notes: 1) 4.25 gal of water
2) Steep grains at 150F for 45 mins
3) Add Liquid Malt Extract, heat to boiling
4) 60 min boil, Add Columbus hops at beginning of boil
5) Add 1 oz el dorado/ 1 oz nectaron at last 10 mins and whirlfloc tab
6) stop boil, let sit of 15 mins (proteins will drop from solution)
7) Add 12.5 lbs of ice to bucket, add wort to bucket
8) Sanitize carboy, add wort to carboy, pitch yeast into carboy
8) Shake carboy to add O2, add sani'd stopper with Airlock full of sani
9) Ferm at 70F for 7 days
10) Add last 2 ozs of hops (el dorado/nectaron)
11) Puree Peaches, add to secondary
12) rack beer to secondary. Age for 4-5 days
13) bottle, condition at room temp (70F) for 1 week
14) Chill and serve! |

Notes: 0 cane sugar. Had to add a fermentable to save recipe.
5 gallons of water from Walmart water refillable jugs.
4 lemons juiced with citrus juicer. Approximately 7 oz.
2 small spoon fulls of citric acid from canning section
2 oz Approximately lactic acid
Taste tested for slight sourness like a berliner.
Boiled 5 minutes, then added lemon peels/zest and pineapple cores and scraps. I cut the outer part of the pineapple off, rinsed with water, then cut "eyes" off thinly around outside edge. This part would normally be discarded but will provide juice and flavor the water like a tea.
Boiled additional 5 minutes and begin to cool to 170/175 for whirlpool hop additions. Add hops and whirlpool for 20 minutes. Cool as low as possible and transfer to a keg.
Carbonate once cooled and shake to force carb. Can also use soda stream for fast carb. |

"Miyasaka Brewing is based in St. Louis’ sister city of Suwa, in the mountainous Nagano prefecture west of Tokyo. Brewed by the Miyasaka family since 1662, their Masumi sake (meaning transparency, or truth) is highly regarded. It was also at their brewery where the world’s most popular sake yeast strain, “Brewing Association Yeast #7” was first discovered and isolated. After discussing the elegance of a sister cities collaboration to celebrate JASSTL’s 50 th anniversary, Miyasaka very generously sent Urban Chestnut some of their home yeast to brew the new beer."
