Notes: Fermented the beer in the primary at 56F for 2.5 weeks. Secondary fermentation at 58F for 1.5 weeks. The beer had a slight fruity/cider taste when bottled. After sitting for 4 weeks, the beer was smooth with a hint of sweetness.

Notes: I miscalculated on this recipe, originally using the default "Dried Malt Extract - Pilsen" drop-down selection which assumed 42 ppg instead of the 45 ppg of the Briess Pilsen DME I used. This was enough to kick the O.G well up from the original 1.099. Measured O.G. was 1.107.
Fermentation at ~70° took about 4-5 days to complete. FG: 1.017, 84% attenuation -> 11.8%-13.1% ABV (I might recommend 5 lbs of DME next time).
Primed with 3.5 oz of corn sugar *and* ~1/2 packet of reconstituted T-58. |

Notes: John Palmer suggests these first four specialty grain proportions as rough approximations for a stout in his book "Learn to Brew". Figured I'd give it a try.
For a full-bodied, sweeter beer, I have selected a yeast strain with moderate attenuation. [And it's cheap :)]
I usually go a bit low on the hops in my dark beers.
