Notes: This is an homage to Mac's Brown Ale within McAnally's Pub found in the work of fiction known as The Dresden Files. It's supposed to be a full-bodied, and slightly nutty Old World Brown Ale. Notes: This is based on the BrewUK extract recipe for Rocker APA but with the partial 20 pint boil. Only 1kg of extract is used for the first hop boil with the other 2kg added for the final 15 minute 2nd hop addition. This means the IBU value given above will be short by quite a margin! It is more likely around 55 to 60. I have added citra hops to the boil and dry hop and tweaked overall hop balance slightly so it brings down the bitterness slightly overall but with a more complex and citrus hop flavour (hopefully!).
First batch achieved final gravity of 1.010 after 3 weeks in the fermenter. Put in pressure barrel to condition with sugar primer made with 70g golden granulated sugar. |

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb American Two Row
1lb Carahell
.5lb Cara Pils/Dextrine
3lbs Dry Malt Plain Amber Extract
3lbs Dry Malt Plain Light Extract
3oz Northern Brewer hops
2oz Simcoe hops
1oz Centennial Hops
1 Pack Nottingham Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, heat to 165 degrees and steep grains for 20 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 3lbs Dry Malt Plain Light Extract, 3lbs Dry Malt Plain Amber Extract and return wort to boil
Add 2oz Northern Brewer hops and boil for 60 minutes
Add 1oz Simcoe hops and boil for 45 minutes
Add 1oz Simcoe hops and boil for 30 minutes
Add 1oz Northern Brewer hops and boil for 10 minutes
Add bottled water to bring the specific gravity to 1.059 and cool work to 70 degrees
Add Nottingham Ale Yeast
Fermentation:
Primary – 2 weeks at 60-68 degrees
Secondary – 4 weeks at 60-68 degrees
Add 1oz Centennial hops to secondary fermenter 5 – 7 days before bottling day
Bottle beer 5 - 7 days after dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer
Condition beer for 4 weeks at room temperature

Notes: - Aerate wort for 10' with aeration stone and air pumptch yeast below 85 deg
- Pitch yeast at 70 and cool to 52
- Ferment at 52 deg
- Re-rack and keep at 52 deg
- Close to or at F.G. conduct Dycetyl rest
Slowly bring up to 67 deg over 3+ days. Hold for 48-60 hours.
- Slow crash to 32 deg
- Keep at 35 deg for at least 30 days.
Actual F.G. = 1.0207 so 4.73 very clear and the color seems right on.
**All temperature changes should be less than 10 degrees per day!**
This beer worked really well. Clear, crisp, slight honey flavor picked up by most tasters. Some tasters picked up the grapefruit in the hops. Well received!
