Notes: 1. Bring 2.25 gallons filtered water to 160°F
2. Add nylon bag containing grains to water
3. Cover and steep at 155°F for 1 hour
4. Squeeze liquid out of beer with tongs
5. Bring mash to boil
6. At first boil, add 0.25 oz EKG hops
7. At 30 min, add 0.25 oz EKG hops, 1 oz maltodextrin, yeast nutrient
8. 10 min left in boil add 0.5 oz Citra hops
9. At 60 min stop boil and remove from heat.
10. Set pot in ice bath and cool to 70°F
11. Pour mash through filter into fermenter, aerate.
12. Pitch one packet Safale S-04 yeast into mash.
13. Set up blow-off tube and ferment at 65°F.
14. After 2 days, replace blow-off tube with air-lock and ferment for 12 more days.
15. After 14 days of fermentation, bring 1 C of water and 1.0 oz priming sugar to a boil
16. Cool sugar solution to room temperature, rack beer onto sugar solution.
17. Bottle and let condition for 6 weeks before enjoying. |

Notes: NOTE ON MASH:
Steep corn grits separately in 1.5 gallon of water at 145º for 20 minutes, then add to the main mash and grains after the 122º step. This should bring the total mash volume in the main kettle to 8.5 gallons.
NOTE ON FERMENTATION:
Rack to two different 3 gallon carboys. Ferment with Oud Bruin yeast for 1 week. To one carboy, add all of the LAB; to the other, add the Lochristi brettanomyces. Age at ambient temperature for no less than one year, up to two.
POST-FERMENTATION OPTIONS:
1. Blend with cherries or raspberries after 1 year.
2. Blend with one or more batches of different ages.
3. Serve unblended, bottled and primed with sugar. |

Notes: Batch 7.1
Used "Triple sec essence" (50ml) rather than orange peel as an experiment. Probably need to crack coriander seeds more thoroughly.
Fermented 11 days, FG only went to 1.10 not 1.005 and slight hints of 'cidery' smells as I bottled it (acetaldehyde?).
Possibly needed longer fermenting time and/or lower ferm. temp
Will go for long condition at room temp and in fridge to try and fix.
Planning for 2nd brew, revamped recipe quite a bit. Changed grist mix and further research suggests the ZEST of 1-2 oranges (ensure no pith) and well crushed coriander seeds. |
