| Notes: Most of the pumpkin flavor dissipated, I would likely scrap the pumpkins. It led to a ton of trub and a pasty mess. It tastes more or less like a shipyard pumpkinhead with a little more rich of a malt backbone. The spices are subtle but there, you could probably increase by 1/4 or maybe add more spices like you would a dry hop. |

Soak 100g of cocoa nibs in 250ml natural organic sour cherry extract for 24 hours at to whirlpool at around 70c

~Color is off, looks like muddy river water?!
~Used a half pack of US-05 yeast. Fermenting in a 3 gal., carboy.
~End volume is off by about 2 pints.

~Fermentation is going well. Smell is a nice yeast/bread smell. CO2 is bubbling away. Average temp seems to be between 68F and 70F. |
