Notes: Brewed on June 16. First attempt at making a selter.
I heated up 3 gallons of water to 175 degrees F to kill any yeast/bacteria.
I then added 4 lbs of cane sugar into the water and let it dissolve along with ~3 tsp of yeast nutrient. Once it was around 95 degrees I poured into sanitized fermenter and added one dry package (11 g) of Omega Lutra Voss Kviek yeast.
After one week of fermentation I added the juice from 20 limes along with the smashed limes in a muslin bag and let fermentation continue for 4 more days.
On June 26 I added a 1:1 mass ratio (100 g each) of oleo-saccharum (cane sugar and lime and grapefruit peels) to 5 gallon keg and then added the 5 gallons of fermented lime seltzer. Put in kegerator at ~12 psi. |

Notes: Guppy's Hazy IPA
- Add 1oz Ekuanot/1oz Mosaic pellets in after 2-3 days of primary fermentation (dry hop #1).
- Leave in primary fermenter until active fermentation ends (1-2 weeks).
- Transfer to secondary fermenter and add 1oz Ekuanot/1oz Citra pellets (dry hop #2).
- Leave in secondary fermenter for 1 week before bottling.
- Should make about 48 bottles (2 cases).

| Notes: Partial volume mash, boil from 4.1 down to 3.5 gallons, then top up with RO water to 5.5 gallons total. Then split into two 2.75 gallon batches (3 gallon fermenters)... pitch Omega All The Bretts into one, and a mix of Philly Sour and Omega Where Da Funk into the other (give the sour a couple days head start to make the Lactic acid first). After about 3 months, dry hop (split evenly, 4 oz per batch) before packaging. |
