- Vienna base for bready aromatics and spice
- Chocolate/caramel rye for color and mild roast
- Crystal 45L (for a kick of caramel and biscuit flavor)
- Crystal 90L (for some deeper burnt sugar and dark fruit notes)
- Flaked barley for mouthfeel softness and head retention
Aim for 30 IBUs. Bitter at 60, no late addition.
Clove, cinnamon, nutmeg and pomegranate juice added after primary fermentation is finished (so, at conditioning time). Tincture the spices in vodka for a week, mix tincture and pomegranate juice, add in keg when transferring after cold crash. |

Notes: This recipe is an amalgamation of the American Amber and West Coast Blaster recipes from the Brewing Classic Styles text. I was interested in creating a more malt-forward Amber, and so I utilized the grain bill from the West Coast Blaster recipe and the hop schedule from the Amber Ale recipe. The result was a smooth ale with a hint of chocolate that became more present as the beer warmed up.
The beer tasted good served at 42 degrees, but I found myself preferring the flavor profile as the temperature approached the upper 40s. |
