Notes: Mashing grains at 156 F to extract sugars out of grains, After mashing boil for 60 min leaving at 5.1 gallons of wort. After primary fermentation add coffee beans ( Went with breakfast blend because its very light on the bitter side) to extract flavors try using two methods:
Method 1) put beans in a sauce pan and cover lightly with water and heat up the pan to 180 F to kill any bacteria and then chill and to fermenter.
Method 2) at the start of primary fermentation place the coffee beans inside a mason jar and put some vodka solution and shake once a day for a week. After one week dump whole batch into fermenter.
Planning on adding 1LB Breakfast blend coffee beans Along with hazelnut extract for flavoring |

Notes: A rich, spicy Christmas Ale based on an English Brown Ale recipe with seasonal additives.
Cinnamon and ginger go in (bagged) for full length of the boil.
Honey and treacle go in for last 5 mins of the boil at the same time as
the secondary spices.
Sprinkle yeast on top of the aerated wort, leave for 30 minutes, then stir in vigorously.
Ferment for one week at 21 then raise the temp to 23 for the second week to draw out the fruity esters we want for this brew. |

Notes: mash as usual, collect wort and boil for 15 mins, cool to ~100, add lactic acid to adjust pH to ~4.5, add good belly, blanket with CO2 and saran wrap, when taste/pH acceptable (3.2-3.3) boil for 15 min w/ hops and cool, transfer to fermenter and pitch yeast
For 644, pitch at 75 degrees and ramp to 78 after 2-3 days of fermentation. Give starter several days to build up. Under pitch slightly and possibly no aeration for a fruitier result. may need to let sit in fermenter for longer than normal to achieve FG. (Ferment in upper 70's)
